Today I’ve got a quick and easy breakfast recipe for you. Matcha latte chia pudding.

Because I’ve totally hopped on the matcha bandwagon and now love with drinking matcha tea and using matcha in my recipes, like in these brownies and this oatmeal!

Matcha is SO versatile and can be used in so many ways. You can drink it as a traditional hot tea, make it into a delicious latte, or use it in baking & cooking to add some flavour to your recipes.

If you’re not familiar with using matcha before, let’s explore a bit more about it!

What is Matcha?

Matcha is a powdered green tea, where rather than brewing the dried leaves in hot water, you are actually drinking the ground up tea leaves. Matcha powder has a ton of health benefits and antioxidants in it. It does have caffeine, and can offer you a little caffeine boost, without the traditional crash that many people get from drinking coffee

There are many different types/qualities of matcha for a wide variety of prices. Typically, you will want to choose a higher quality matcha if you’ll be using it for just drinking, and can use a slightly lower quality matcha in baking.

One important thing to look out for when choosing matcha is the colour. The matcha tea should have a nice bright green colour. I found this guide helpful for selecting a high-quality matcha tea!

A few notes on the recipe:

The base of the recipe starts with (of course) chia seeds and plant-based milk. I like to use a mix of homemade almond milk and coconut milk for this recipe to really give it a rich and creamy consistency. Since coconut milk has a higher fat content, it gives the chia pudding a rich texture. If you prefer, you can use all almond milk in the recipe instead.

This matcha latte chia pudding can be prepared a night in advance before you want to enjoy it, or at least an hour before. You’ll want to make sure to whisk up the chia pudding really well before letting it sit to gel. If the chia pudding mixture becomes too thick if you let it sit overnight, simply add a bit more almond milk.

Instructions

  1. Whisk all the ingredients together in a bowl until well combined.
  2. Place in the fridge for at least an hour before serving or if you have time, overnight.
  3. Optionally top these chia puddings with some non-dairy yogurt and a sprinkle of matcha powder

Notes

Chia pudding is best when it sits in the fridge overnight to really absorb the liquid, but it will still be delicious even if you let it sit for just an hour.

If your chia pudding seems really thick, add an extra couple tablespoons of almond milk and mix. The longer it sits, the more liquid the chia will absorb.

Store this chia pudding in an airtight container in the fridge for up to a week.
