Chicken Tikka Masala Meatballs


We loooooove Indian food, and are starting to experiment with making more of it ourselves. We agreed that these meatballs are one of the best lunches that we have made, and we've made a lot of food! They're definitely going to become a dinner staple. Absolutely delicious, and pretty quick and easy.

Chicken Tikka Masala Meatballs

servings: 4-6
time: 30 minutes

Ingredients:
Meatballs:
  • 1 lb. ground chicken
  • ¼ onion, chopped small
  • 1 Tbsp minced ginger
  • 1½ tsp cumin
  • ½ tsp black pepper
  • ½ tsp cinnamon
  • ½ tsp cayenne pepper
  • ¾ tsp salt
  • 1 egg
  • 1⁄3 cup breadcrumbs
  • 3 Tbsp yogurt
  • 3 Tbsp cilantro, minced
  • sprinkle of red pepper flakes

Sauce:
  • 1 Tbsp butter
  • 1 clove garlic, minced
  • 2 tsp cumin
  • 2 tsp paprika
  • 1 tsp salt
  • sprinkle of red pepper flakes
  • 1 15 oz. can tomato sauce
  • 1 cup heavy cream
  • ¼ cup cilantro, chopped

Directions:
  1. Preheat oven to 400 degrees. Line a large, rimmed baking sheet with aluminum foil and spray with cooking spray.
  2. In a medium bowl, mix all meatball ingredients together with your hands.
  3. Roll into golf ball-sized meatballs and place on pan.
  4. Bake for 10-12 minutes, until browned on bottoms and cooked through.
  5. While meatballs are baking, make the sauce. In a small bowl, combine spices and set aside.
  6. Melt butter in medium saucepan over medium heat.
  7. Add garlic and saute for one minute.
  8. Add spices and cook for another minute.
  9. Stir in tomato sauce and cream. Simmer on low heat until sauce thickens, about 20 minutes.
  10. Toss cooked meatballs in sauce, sprinkle with cilantro, and serve.
These were great reheated! We cooked 2 cups (dry measurement) of sticky rice on the side and served the meatballs over that. SO GOOD.
