Buffalo Chicken Meatballs

Love that spicy buffalo flavor but not the mess and guilt of eating fried buffalo wings?  These baked buffalo chicken meatballs are a fun and tasty way to enjoy the flavor of buffalo wings without all of the guilt!

My wife and I LOVE buffalo chicken.  When we first started dating, it was one of the first dishes I made for her.  To this day, we have buffalo chicken and macaroni and cheese once a week.  I cook a couple chicken breasts and shred them up, and add homemade buffalo sauce, and we have a great weeknight meal!

As much as I love eating it at home, I hesitate to order buffalo wings whenever we go out.  They’re so messy to eat, and let’s be honest, it’s not a good look for anyone! I’ve come up with a much cleaner and healthier way to consume that delicious buffalo flavor: baked buffalo chicken meatballs! That way you can enjoy all of the flavor with none of the guilt.

The best part about this recipe is that you only need a couple ingredients to have a delicious and nutritious meal any night of the week! These little bites also double as an appetizer, which is perfect for that big football game coming up.

How do you shape the meatballs?

I love making meatballs with a medium cookie scoop with a release.  It ensures that each buffalo chicken meatball is the same size, and therefore cooks at the same time.  The release on the scoop just makes everything easier! If you wet your hands before rolling each meatball, it will prevent the meat from sticking to your hands.

How do I keep my buffalo chicken meatballs moist?

I like to cook all my meatballs in a shallow baking dish with a little bit of water on the bottom.  I cover the dish with foil so that it creates steam, and prevents the buffalo chicken meatballs from drying out.

How do I make buffalo sauce?

While the buffalo chicken meatballs are in the oven, make the buffalo sauce by combining 1 cup Franks RedHot Sauce and 1 stick of butter in a small saucepan over low heat until the butter has melted.  Stir to combine.

Buffalo Chicken Meatballs

Ingredients

Scale

1 lb ground chicken

1/4 cup Parmesan

3 clove garlic, minced

1 tsp salt

1 tsp pepper

2 celery stalks, diced fine

1 carrot, grated

2 tbl Frank’s RedHot Sauce

2 tbl green onion, sliced

For the Buffalo Sauce

1 cup Franks RedHot Sauce

1 stick butter


Instructions

Mix ground chicken, Parmesan, green onion, garlic, carrot, celery, Frank’s RedHot sauce, salt and pepper with your hands until combined well. Using a small scoop with release, scoop out meatball mix and shape with hands.  Repeat until no meatball mix remains.

Place meatballs in a shallow baking dish and put enough water on the bottom to fill a quarter way up the meatballs.  Cover with foil and bake at 375 for 30 minutes or until internal meatball temperature reaches 165. 

While the meatballs are in the oven, make the buffalo sauce by combining 1 cup Franks RedHot Sauce and 1 stick of butter in a small saucepan over low heat until the butter has melted.  Stir to combine. 

Once the meatballs have reached 165, remove from the oven and with a slotted spoon, remove from the baking dish.  Gently toss in buffalo sauce and serve garnished with blue cheese, green onions and Litehouse Chunky Blue Cheese Dressing for dipping!
