Creamy Chicken Peas Soup

Creamy Chicken Peas Soup is a perfect lunch or dinner meal you can easily store in your fridge or freezer. Not all creamy soups freeze well, but this one does, it’s absolutely delicious. I usually have a very strict working schedule and doing a meal prep on weekends is a huge time saver for me. This creamy soup can be stored in the fridge for 4-5 days.

Creamy Chicken Peas Soup
I find this delicious creamy chicken peas soup a great meal for kids that don’t like veggies. All the ingredients are mixed (I like to say masked 🙂 ) and your children won’t even recognize what’s inside. Taste is absolutely amazing! You can’t go wrong with this soup.

INGREDIENTS

  • 15.9 oz (450 grams) frozen peas
  • 8.8 oz (250 grams) fresh sliced carrot
  • 2 medium-size potatoes (cube cut)
  • 1/3 cup chopped scallions
  • 2 garlic cloves sliced
  • 17.6 oz (500 grams) chopped chicken breast
  • 1/2 cup chopped parsley
  • 1 teaspoon salt
  • 1/3 teaspoon ground black pepper
  • 1 vegan bouillon cube (palm oil free)
  • tablespoon of olive oil
  • water

INSTRUCTIONS

  • Add olive oil, chopped scallions, sliced garlic, salt, and black pepper to a pot heated over medium heat. Saute onions until golden brown. Stir well. When done add about 3.4 fl oz (100 ml) water and add sliced carrots. Cook for about 5 minutes.
  • In the meantime, cube cut the potatoes, add to the pot along with 67.6 fl oz (2 liters) of water. Bring to boil, add a vegan bouillon cube, and let it cook for about 15 minutes.
  • Add peas to the pot and cook for another 15 minutes. On half way through add chopped chicken breast. Stir everything. At the end add chopped parsley and cook for 5 minutes.
  • At the end add chopped parsley and cook for 5 minutes.
  • Let it cool for about 5-10 minutes and add to blender or use a stick mixer. Mix until smooth and creamy.
