Bear Paw Coconut Cream Cheese Cupcakes

Only one week left. I admit that I haven´t baked anything yet, not a single thing 😀 I have my last exam on Wednesday, only then I can fully bake, decorate a Christmas tree, a house and profit from Christmas mood. For the first time in 5 years of my university study, I won´t have to study for anything during holidays (well, I hope so, if I successfully pass my exam), I´m excited about that. But stick to the point, the cakes. These Polar Bear Paw Coconut Cream Cheese Cupcakes are perfect for Christmas and the young family members will be excited about their look too.

I decided for coconut flavor, coconut milk (the thick one, from a can) is used here, and the top of a cupcake is rolled in shredded coconut, so it resembles to snow. Icing is light and fluffy, made with cream cheese and heavy cream. You can basically make a paw on any cupcake, but I thought that a subtle coconut cake flavor and light icing is perfect for that. These cupcakes will taste and look great on your Christmas table.

Cupcakes made with coconut milk, cream cheese and heavy cream icing, covered with shredded coconut, resembling to a polar bear paw
Servings: 27 cupcakes
Ingredients
  • Cupcakes:
  • 230 g butter
  • 300 g sugar
  • 2 eggs
  • 4 egg whites
  • 300 ml buttermilk
  • 1 tsp vanilla extract
  • 420 all-purpose flour
  • 3 tsp baking powder
  • ½ tsp salt
  • 310 ml coconut milk
  • 90 g unsweetened shredded coconut
  • Icing:
  • 500 g cream cheese
  • 120 g icing sugar
  • 2 tsp vanilla extract
  • 250 ml heavy cream
  • Unsweetened shredded coconut
  • Oreo cookies
  • in Raising covered chocolate
Instructions
  1. Beat butter with sugar until fluffy.
  2. Add eggs and egg whites one at a time, beat after every addition.
  3. Add buttermilk and vanilla extract, beat again.
  4. In the second bowl, whisk together flour, baking powder and salt.
  5. Add 1/3 of the coconut milk, of the flour mixture and of shredded coconut into the butter mixture, beat after every addition. Proceed in the same way, until there is no coconut milk, flour mixture or shredded coconut left. Beat well.
  6. Pour batter in cupcake cups and bake on 180 degrees for about 25 minutes.
  7. Let them cool and decorate them with icing.
  8. Icing:
  9. Beat cream cheese using a mixer.
  10. Add icing sugar and vanilla extract, beat again.
  11. Gradually add heavy cream while having a mixer on a low speed, then increase the speed.
  12. If icing seems to liquid to you, put it in a refrigerator for a while.
  13. Put icing in a piping bag and decorate cooled cupcakes with it.
  14. Put shredded coconut on a plate and cover the top of a cupcake – places, where icing is – with coconut.
  15. Divide oreo cookie into 2 parts, put 1 cookie in the middle of a cupcake. Put 2 – 3 raisins in chocolate above a cookie.
