My mom hated eggnog. HATED it. Didn’t want to see it in a glass or even smell it.

So, naturally, my sister and I would pour ourselves a glass and slowly and methodically sip it while making direct “Children of the Corn” eye contact with her. I’m sure you’re thinking “man, kids can be so cruel”.

We were in our 30’s.

But eggnog in waffles? I think she totally could have gotten on board with that. The eggnog flavor in these amazing waffles is light and not overpowering. They taste like warm and cozy spiced waffles. They taste like the holidays.

They don’t taste like carby maternal torture devices.

The best part about these eggnog waffles is that you can totally make them ahead of time! Just like my Overnight Cinnamon Rolls, these waffles can easily be prepped a few days before a big event.

That means on Christmas morning you can chill in your jammies, casually pop a few homemade eggnog waffles in the toaster, and be on your merry way.

What Ingredients Are In Eggnog Waffles?

Hold onto your butts, but there is eggnog in these eggnog waffles. I know.

There is also:

  • Whole wheat flour (sub in all-purpose if needed)
  • Vital Wheat Gluten (leave out if using all-purpose)
  • Cinnamon
  • Nutmeg
  • Butter or coconut oil
  • Eggs
  • Vanilla (related: Homemade Vanilla Extract)
  • Baking powder and salt

What you won’t see is added sugar, because um, eggnog is already pretty loaded with it.

How to Make Eggnog Waffles

Combine dry ingredients in a large bowl and whisk until mixed. Mix wet ingredients in a separate bowl and whisk until well combined.

Make a well in the dry ingredients, and add the wet ingredients, and stir just a few times. There may still be some lumps. That’s ok. Set aside for at least 10 minutes and preheat your waffle iron. Oh, and this waffle iron has removable/washable plates. Hollah!

Lightly spray the hot waffle iron with olive oil spray (I use a Misto so I can easily refill it which makes it a sustainable option), and pour batter into the waffle maker (See your manual because each model will recommend a different amount) until cooked through.

Pro Tips/Recipe Notes

  • For the fluffiest waffles, don’t overmix the batter!
  • No whole wheat flour? Use the same amount of all-purpose flour and leave out the vital wheat gluten.
  • Leave the batter in the fridge overnight if you’d like to make the waffles fresh in the morning.
  • No eggnog? You can make your own or simply use your favorite milk of choice.
  • For make-ahead options: allow the waffles to fully cool before storing in an air-tight container or freezer ziploc. To cook: pop frozen or fridge-temp waffles in your toaster for a few minutes.
  • Toppings: maple syrup, cinnamon maple syrup (add 1 tsp ground cinnamon to 1 cup maple syrup and heat over low until the cinnamon is incorporated), whipped cream, or vanilla Greek yogurt.

  2. I have a complicated relationship with eggnog. I love it, but it also grosses me out so much when I think too deeply about what I’m drinking. Eggnog in waffles though? I’m totally on board with that! I love that these can be made in advance and will be ready for me on Christmas morning. So good!5 stars
