Christmas Gingerbread Red Velvet Bars

Although Christmas baking is mainly about cookies, I´m sure you also bake one or two creamy cakes. Moreover, what´s more Christmas-y than the smell of gingerbread. I combined gingerbread with traditional American recipe for Red Velvet and made Christmas Gingerbread Red Velvet Bars. The dessert Red Velvet is known for its fluffiness, red color and mascarpone or cream cheese and whipped cream icing. I chose traditional cream cheese and I ran out of red food coloring, so bars are more pink than red, but it doesn´t change their lovely taste. Subtle gingerbread taste is a great match for the cake and it creates an interesting delicious combination. Red color and gingerbread –  why not to combine these two traditional Christmas symbols, I´m sure that you will be intrigued by its Christmas taste.

Traditional American Red Velvet cake, made with gingerbread spices in a round baking pan
Ingredients
  • Cake:
  • 375 g cake flour
  • 1 ½ tsp unroasted/raw cocoa
  • ¾ tsp salt
  • ¾ tsp baking powder
  • 2 tsp gingerbread spices
  • 170 g butter at room temperature
  • 400 g sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • 360 ml buttermilk
  • Red food coloring
  • 1 1/2 tsp vinegar
  • 1 1/2 tsp baking soda
  • Icing:
  • 600 g cream cheese
  • 10 tbsp icing sugar
  • 2 tsp vanilla extract
  • 500 ml whipping cream
Instructions
  1. Cake:
  2. Sift flour with cocoa, salt, baking powder and gingerbread spices.
  3. In the second bowl, beat together butter with sugar until fluffy. Add eggs, one at a time, then vanilla extract and beat again.
  4. Whisk buttermilk with food coloring.
  5. Using a mixer on low speed, incorporate the half of flour mixture into the butter mixture.
  6. Then incorporate the half of buttermilk as well. Beat the mixture and repeat – incorporate the second half of flour mixture, beat it, and add the second half of buttermilk.
  7. In a cup, combine vinegar and baking soda. Immediately when it starts to fizz, fold it into batter.
  8. Beat batter.
  9. Pour batter in a baking pan covered with baking paper and bake for 25 – 30 minutes on 190 degrees or until the inserted toothpick will come out clean.
  10. Icing:
  11. Beat cream cheese with sugar. Add vanilla extract.
  12. In the second bowl, whip whipping cream and then add it into cream cheese mixture.
  13. Spread the icing over the cooled cake.
  14. It can be decorated with Christmas sprinkles.

    Výborný koláč, dúfam že sa zajtra bude tiež páčiť na rodinnej návšteve. Akurát som bola dosť opatrná s červeným farbivom, takže mám namiesto red velvet pink velvet 🙂
