Reindeer Holiday Cupcakes

Take the stress out of holiday shopping for co-workers with the key to everyone’s heart, baked goods! These adorable reindeer holiday cupcakes will be the talk of your upcoming office party, I guarantee it! 

It’s the most wonderful time of the year!  If you’re like me, picking gifts for your co-workers is one of the most difficult things to do.  What I’ve learned in my years in the corporate industry, you can never go wrong with food!

It was almost guaranteed that every time I had brought cupcakes into my office, they’re gone within minutes of pressing send on that email to the staff.  Which is why this year, I’ve got you covered! I’m partnering with Solo Cup to take the stress out of holiday shopping with these adorable Reindeer Holiday cupcakes!

These reindeer holiday cupcakes are perfect for snacks during the “white elephant” gift exchange or to pass out after a company lunch!  Most importantly, they’re delicious, and a total crowd pleaser!

What flavor cupcakes should I bring to my office?

Start out with my delicious Madagascar vanilla bean cupcakes and the best vanilla buttercream ever (recipe below).  It’s a safe bet for people with food allergies, and if you’re feeling adventurous, you can add some other flavorings (think peppermint, lavender, almond, etc.)  If you want to take a shortcut and use a box mix, my favorite is Betty Crocker’s Super Moist French Vanilla mix.  Substitute water that the box calls for with milk and add 2 tsp of vanilla for a better tasting box mix.  If you’re super crunched for time, pick up some store bought cupcakes from your favorite bakery and decorate! Your co-workers will never know 😉

How do I pipe the buttercream?

Using a piping bag and  large open star tip, start in the center of the cupcake and pretend like you are drawing an “e” on the top of the cupcake, and swirl around.  As you are reaching the end, release pressure on the piping bag.  If you want to play around with some other designs, check out this video for some other styles!

How should I decorate my reindeer holiday cupcakes?

Pick your favorite holiday sprinkle mixes and using Solo’s 9 oz clear plastic cups as holding vessels, decorate the cupcakes with a mix of sweet toppings.  I like to buy a bunch of different holiday ones from Etsy or Michaels and make my own mix in the Solo cups.

I got these adorable reindeer cupcake wrappers a while back and have been dying to use them! They’re perfect for the holidays and just add a super festive touch to these little gifts! I love the sparkly red nose and gold antlers, don’t you?!?Reindeer holiday cupcake

After frosting, wrapping and sprinkling the cupcakes, place them in the same 9oz clear party cup for safe transportation! Throw some plastic wrap over the top and voila! You’re all set! Madagascar Vanilla Reindeer Cupcakes

Ingredients

Madagascar Vanilla Bean Cupcakes

  • 2 1/2 cups all purpose flour
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup vegetable oil
  • 1 1/2 cups sugar
  • 3 tbsp vegetable oil
  • 2 tsp Madagascar vanilla bean paste
  • 4 large eggs
  • 1 1/4 cups milk

Best Ever Vanilla Buttercream

2 sticks softened unsalted sweet cream butter

3 cups sifted powdered sugar

2 tsp vanilla extract


Instructions

1. Combine the flour, baking powder and salt in a medium sized bowl and set aside.

2. Combine eggs, milk, oil and vanilla in another bowl.

3.  Add wet to dry and mix to combine.  

4. Line a standard size muffin tin with paper baking cups 

5. Using a large cookie scoop with release, fill cups with a full scoop of cake batter.

6.  Bake at 350 for 12 minutes or until tops are slightly golden. 

7.  Let cool and frost.

To make the buttercream: 

In a stand mixer, or with a hand mixer, combine softened butter and sifted powdered sugar and beat on high with a paddle attachment for 5 minutes.  Add vanilla and turn mixer to low and mix for another 30 seconds.  

Cut the tip off of your piping bag and insert star tip.  Fill with buttercream and pipe on cupcakes. Top with sprinkles and wrap with reindeer wrappers.  Insert into Solo’s clear cups.
