Fra Diavolo (Brothers Devil in Italian) is a sauce that is normally a tomato-based sauce with chili peppers for spice normally with seafood. Scampi Fra Diavolo has everything that makes a great meal, butter, garlic and a bit of a spicy (but not to much) that leaves your mouth looking for more. The tender shrimp covered in the crunchy panko breadcrumbs make it perfect over pasta, polenta over even as an appetizer on top of toasted bread. The amount of crushed pepper can be lowered and raised for your taste for the heat you are liking. In a large nonstick pan, add 1 tablespoon of butter. Once melted add the bread crumbs and heat until golden brown, about 2-3 minutes. Add 2 tablespoons of chopped parsley and mix until combine, remove from heat and transfer to a small bowl. Wipe the pan clean. Place the pan back on the heat and melt the remaining 2 tablespoons of butter. Add the tomatoes, garlic and red pepper flakes until garlic is golden brown and fragrant. Add the shrimp and sauté for 1-2 ins until the shrimp is starting to color slightly. Add the white wine and cook until the wine has reduced by half, about 2-3 minutes. Season with salt and pepper. Stir in the remaining parsley and place in a bowl. Sprinkle the Breadcrumb mixture over and serve with lemon wedges. |
