Best Homemade Cheesy Italian Sandwiches

As you already know we like Italian cuisine, especially all Italian cheeses. In this Best Homemade Cheesy Italian Sandwiches recipe we added as many kinds of cheese as we could – you can always add your favorites and make the sandwiches your way. These are Darko’s favorite sandwiches and this recipe is his creation! 🙂

Ricotta is one of the most famous Italian white cheeses. It has a soft texture and delicately sweet taste. It perfectly goes with pastries or any kind of bread you have and can be the perfect side dish or extra topping for some breakfast recipe for all cheese lovers.

Best Homemade Cheesy Italian Sandwiches

Prep time: 15 min   Cook time: 3-5 min   Total: 18-20 min   Servings: 1




 

 

INGREDIENTS

  • 1 medium size buckwheat roll
  • 4 tablespoons ricotta cheese
  • 2-3 medium-size white mushrooms
  • 4 slices of Provolone cheese (Italian cheese from Vesuvius region)
  • 3 tablespoons homemade roasted eggplant pepper spread
  • 2 teaspoons of grated Pecorino cheese
  • 4 olives

INSTRUCTIONS

  • Preheat the oven to 480 F (250 C). Line with parchment paper a small pan. Set aside.
  • Cut the buckwheat roll into two equal halves. Feel free to use any type of bread you like. Spread the ricotta cheese on both roll halves. Add mushrooms on top and then add Provolone cheese slices. Transfer the sandwiches to a prepared pan and bake for 3-5 minutes.
  • When done spread roasted eggplant pepper spread. Then add grated Pecorino cheese and sliced olives.
