I love the nostalgia of a great oatmeal cookie. Now a days I wouldn’t mind a raisin oatmeal cookie, but back when I was a kid it was always the BIGGEST disappointment when I saw that golden brown, fresh from the oven cookie and realized they were raisins-and not chocolate chips! I had to honour my childhood on this one and stick to the best version of an oatmeal chocolate chip cookie I know and love!

Why Make My Vegan Oatmeal Chocolate Chip Cookies?

These cookies use ingredients you most likely already have on hand. They come together easily, and fast! The cookie base is infused with the warm notes of cinnamon and clove-perfect for the holiday season! The added dark chocolate chips deepen the flavour of the crispy cookie, and rounds the whole thing out nicely.

I only used about 1/2 a cup of chocolate chips here-my main motivation? I’ve got kids! Messy kids! Less melted chocolate the better? But, go ahead and up it if you want! I would say you could go up to 1 cup without the dough falling apart.

If you aren’t a big fan of clove or cinnamon-feel free to reduce the amounts of each or omit all together.

These vegan oatmeal chocolate chip cookies are super fast to make and simple-you probably already have the ingredients you need on hand! Crispy, crunchy, and warm, with hints of cinnamon and clove-perfect for the holidays!

Ingredients

  • 1.5 cups flour
  • 1 tsp. baking soda
  • 1/2 tsp salt
  • 1 cup vegan Becel or other vegan butter substitute
  • 1.5 cups brown sugar
  • 1 tbsp ground flax mix with…
  • 3 tbsp. water
  • 2 tsp. vanilla extract
  • 2 tsp. ground cinnamon
  • 1/2 tsp. ground clove
  • 3 cups quick oats any other kind ie: large flake will not work out
  • 1/2 cup semi-sweet dark chocolate chips (vegan) kirkland(Costco) and Decadent(superstore) brands are vegan

How to Make Vegan Oatmeal Chocolate Chip Cookies:

The Nitty-Gritty

  1. Pre-heat your oven to 350 degrees Fahrenheit.

  2. In your stand mixer, (or using an electric hand mixer and bowl) add the vegan butter and brown sugar. Whip together until the sugar and butter have creamed together.

  3. While this mixture is working, mix your ground flax and 3 tbsp. water in a separate bowl. Let stand for 2-5 minutes. It will start to congeal. **This will not work with WHOLE flax seeds-it must be ground.

  4. Add your vanilla and flax mixture to your butter and sugar. Beat again until combined. You want this mixture to be light as air-super creamy and soft.

  5. Sprinkle in the flour, Baking soda, Salt, cinnamon and clove on top of the butter mixture. Stir again in your mixer until just combined. Don’t over mix, your cookies will be chewy and doughy. 

  6. Remove your bowl from the stand mixer and add in your oatmeal and chocolate chips. Stir this in by hand, folding the mixture until just combined.

  7. Using a tablespoon, scoop your cookie dough one tablespoon per cookie onto a lined cookie sheet. I fit 15 on mine. 

  8. Bake in pre-heated oven for 10-12 minutes, until browned. Allow to cool slightly before transferring to a cooling rack.

Recipe Notes

So, this recipe gives you about 60 cookies if you are using a tablespoon to measure. This is what I do because it makes me feel better about eating 5-6 in a row!! If you want a bigger cookie no worries, just adjust the baking time by adding a minute or two:) These cookies are pretty forgiving, so just enjoy!

These VEGAN Oatmeal Chocolate Chip cookies are so delicious with the added cinnamon and the twist of clove. They are crunchy, and perfect for dipping into a nice cup of Chai tea!
