Crockpot Shepherds Pie Recipe

This is going to sound funny, but growing up Shepherds Pie was one of my VERY FAVORITE school lunches.  I don't know why, but I always got excited when I found out that's what we were having.  So while I was learning to cook, this was one of the first recipes I wanted to learn. It has a special place in my heart, so when Crocktober came around I knew I wanted to take this beloved one pot meal to the next level.  


That is exactly what I did, and I KNOW you're gonna love it so...

Let's get started!



Crockpot Shepherds Pie:
*Prep Time: 15 min  *Cook Time: 10 hours *Servings: 6-8

Ingredients:


  • 2 lb Stew Meat
  • 4 Carrots, sliced
  • 1 Onion, diced
  • 8 oz Mushrooms, sliced
  • 1 15 oz Can of Corn
  • 1 6oz Can of Tomato Paste
  • 1/4 c Worcestershire Sauce
  • 1 c beef Broth
  • 1 Tbsp Garlic, minced
  • 1 Tbsp Italian Seasoning
  • 3 Tbsp All Purspose Flour
  • 1 12 oz bag of Frozen Peas
  • Salt and Pepper, to taste
  • 2 24 oz containers of Prepared Mashed Potatoes


To begin you will need to prep your beef.  Usually I would use pre-cut stew meat, but this chuck roast was on sale so I cut it myself.


Place the stew meat into the slow cooker and season LIBERALLY with salt and pepper.


Next prep the carrots and onion.


Place them in the slow cooker as well.


Now add the mushrooms and...


can of corn.  I dump the juices and all.


After that you will add the garlic,


Worcestershire sauce,


beef broth,

I know you think this isn't enough water, but trust me...it is.


tomato paste,


and Italian seasoning.


Give it all a stir.


Place the lid on the slow cooker and set it on LOW for 10 hours.


After about 9 hours your shepherds pie filling will look like this.  I like to taste for seasoning at this point and it definitely needed a little more salt and pepper.

See all those juices.  And you were worried!


Now you will mix the flour with about 8 Tbsp of water.


Pour the flour mixture into the crockpot and stir it together.
This is what gives you that luscious, thick gravy.


Add the frozen peas to the crockpot as well.


You can 100% make your own mashed potatoes, but to me crockpot meals are supposed to be easy, so I like using these ready made mashed potatoes by Bob Evans (not sponsored).


Place the mashed potatoes on top of the shepherds pie fulling.


Place the lid on the crockpot and let cook for one more hour.

This is just long enough for the sauce to thicken, the peas to heat through, as well as the potatoes.


And there you have it!  The finished Crockpot Shepherds Pie!


Just scoop this into a bowl and you are ready to eat.

HOWEVER, I love the crispy bits that you get from the oven, so I took my kitchen torch to the potatoes.  This is NOT a necessary step though.


I wish I could express to you how amazing the flavor of this Crockpot Shepherds Pie Recipe is.  SO rich and hearty.  It's the PERFECT meal for all these cool, rainy nights we've been having this fall.  I know you are going to love it so get in the kitchen and make it TONIGHT!

OH AND PS- This actually made a great beef stew the next day.

PRINTABLE RECIPE

Ingredients:

Directions:
  1. Place the stew meat in the bottom of the crockpot and LIBERALLY season with salt and pepper. 
  2. Add the carrots, onions, mushrooms, corn, tomato paste, worcestershire sauce, beef broth, and Italian seasoning to the crockpot. Stir everything together. 
  3. Place the lid on the slow cooker and set to LOW for 10 hours. 
  4. At the 9 hour point combine the all purpose flour with 8 Tbsp of water.  Pour into the crockpot and stir into the broth.  
  5. Add the frozen peas.
  6. Place the mashed potatoes on top of the shepherds pie.  Cover and cook for one more hour. 
  7. Serve and Enjoy!
