    It’s that weird time of the year again, where it’s not really summer anymore and everybody is already excited for the fall, but it’s still too soon to break out the pumpkin spice lattes. Food bloggers are faced with the question whether or not it’s acceptible yet to post a pumpkin recipe. My answer to this dilema is what I call “transitional fall food”. Aka food that’s not really typical for fall but that falls (pun intended) somewhere in between the seasons, such as butterscotch honey roasted nut butter.

    Honey roasted nut butter is an incredibly delicious comfort food which makes a delicious snack for in between. It sort of fits into the autumn season, but not really, which is why it’s the perfect time to make this snack right now!

    Have you ever had roasted honey nut butter before? It’s like peanut butter but worlds better! It’s equally delicious as whipped honey butter which is really saying something!

    As with all things nut butter, it is important to use a strong blender for churning those nuts and butterscotch chips into a creamy butter. This is where a Vitamix comes in handy, as it does a great job at these kinds of tasks. Whichever blender you use, be sure to blend the nuts and butterscotch chips long enough until the mixture gets slightly warm. This will melt the butterscotch chips and you’ll be left with a super creamy, non grainy nut butter.

    How to enjoy it:

    • Slathered on apple slices
    • Slathered on banana slices or boats
    • Drizzled on ice cream
    • Spread on toast or brioche
    • Drizzled over oatmeal
    • Spread on top of waffles or pancakes
    • Making homemade Reeses peanut butter cups (my personal favorite ;))

    When our grocery store recently started selling roasted honey nuts, I knew I needed to churn them into this delcicious butter. Boy am I glad I did. If you can get your hands on some roasted honey nuts, I highly recommend you give this recipe a try! The combination of salty and sweet makes this such a satisfying snack. Plus you get to tell yourself that it’s still sorta healthy. I mean it contains nuts and nuts are healthy, right?! 😉

    The hardest part about making honey roasted nut butter is keeping yourself from eating all the honey roasted nuts before you throw them into your blender. I’m not joking! Those things are addictive!! I may have eaten half a package in one sitting once. *Ahem. But seriously give this a try, you won’t regret it!

    Butterscotch Honey Roasted Nut Butter

    Description

    Ingredients

    Scale
    • 400g honey roasted nuts (14.1oz)
    • 70g butterscotch chips (1/2 cup)
    • 2 tablespoons canola oil

    Instructions

    1. Add the honey roasted nuts, butterscotch chips and oil to your blender.
    2. Blend for about 3-4 minutes or until smooth, stoping every once in a while to scrape the sides of blender. (If butter still feels a bit grainy, continue blending until completely smooth.)

    Notes

    Store in the fridge for up to 3 weeks.
