Roasted Brussels Sprouts
Tired of making soggy Brussels sprouts? Here are simple steps to making them crispy. This recipe makes the perfect side dish, wholesome appetizer as well as healthy snack.
And with seasonal garnishes, you make them look pretty impressive to serve for a special occasions like Thanksgiving and Christmas Dinner.
This beautiful and nutritious dish is so easy and quick to prepare. It is loaded with superfood that is so very good for you. With a crisp exterior and a softer interior, roasted Brussels sprouts are a new spin on the typical classic Brussels sprouts.
Ingredients
- Brussels Sprouts : Look for bright green color, small size and intact outer leaves. They should feel firm when gently squeezed. Try to buy roughly the same size sprouts so that they cook evenly. I like to buy smaller sized sprouts since they cook faster, are tender and more sweet than bigger size.
- Basic Seasoning : Olive Oil, Salt, black ground pepper and lemon juice.
- Additional Suggested Seasoning : Minced garlic , freshly grated Parmesan cheese and fresh herbs like rosemary or chives are excellent add on seasoning.
Some different flavor combinations you might want to try:
- Just the salt and pepper is best to bring out natural sweetness of these tiny cabbages. Freshly minced garlic is great addition to make them earthy and savory.
- You can also use other other seasoning mixes like , my favorite 21 Seasoning Salute from Trader Joe’s. ( not a sponsored product), old bay , Cajun or Italian spices.
- For the finishing touch, I highly recommend you drizzle some balsamic glaze which is reduced thick balsamic vinegar or pomegranate molasse. The sweet and tart flavors of either these two sauces bring a great depth of richness to caramelized sprouts. It tastes simply AMAZING !
- Some other options are Lemon or lime juice with the zest, Orange juice and zest, and topping of roasted nuts like pine nuts, pecans, chopped almonds, walnuts will add extra depth of texture and flavors.
How to prepare sprouts for roasting
Clean the Brussels sprouts and rinse them under cold water in a colander. Pat dry. Remove the loose leaves from outer layer. (You don’t have to toss them. They crisp up really well when roasted) Cut the tough end stem from each sprout and then cut in half lengthwise.
Making Brussel Sprouts in Air Fryer
- Heat an air fryer to 375º Fahrenheit. Add the sprouts to the air fryer basket and shake into a single layer.
- Air fry, stopping to shake the basket about halfway through, for 15 minutes total.
- When the Brussels sprouts are ready, transfer into the serving bowl. Garnish with optional toppings. Serve immediately.
Stove Top Instructions
- Heat the oil in heavy bottom skillet. I am using cast iron. Arrange the Brussels sprouts cut side down. Don’t bother them for few minutes.
- Let them sizzle and char a little. You want them to get nice, crispy and caramelized. Once they turn brown in color, you can flip them over. Let the other side roast the same way.
- When both sides are nicely charred, turn off the heat. Skillet will be super hot and it will keep roasting them further so factor that in your cooking time. Sprinkle the 21 seasoning Salute, black pepper and salt. Coat the seasoning well and voila !
- Your classic roasted Brussels sprouts are ready. Garnish with Basil leaves and pomegranate seeds for beautiful presentation.
Oven Instructions
- Preheat the oven to 400 degrees Fahrenheit. Line a large baking sheet with parchment paper for easy cleanup.
- Prepare your Brussels sprouts. Combine the sprouts, olive oil and salt. Toss until the sprouts are lightly and evenly coated. You can also use oil mist or spray.
- Arrange the sprouts in an even layer with their flat sides facing down. Roast the sprouts until they are tender and deeply golden on the edges, about 17 to 25 minutes.
- Garnish and add extra seasoning as desired. Roasted Brussels are best served warm, or at room temperature. Enjoy!
Serving Suggestions
Crispy Brussels Sprouts are a great way to get your family to eat their veggies. You can serve them as a snack, side dish or appetizer.
Serve them alongside Penne Rosa or Penne Pesto Primavera for scrumptious pasta dinner. They also taste amazing as a side to Creamy Tomato Soup or Vegetable Barley Soup.

Storage Tips
Refrigerate Brussels sprouts in an airtight storage container for up to 4 days. To Reheat, put the leftovers on a baking sheet pop in the oven or in the air fryer at 350 degrees Fahrenheit. They will get mushy once thawed, so I don’t recommend freezing them.
Pro Tips For Success
- Choose the sprouts of similar size so they cook evenly and at the same time. Cut large size sprouts in half if needed.
- Around Thanksgiving, Trader Joe’s sells Brussels Sprouts stalks. It is a fun activity to cook with kids. That store also sells frozen baby sprouts which is my favorite.
- Regardless of which method you choose, make sure to spread them into a single layer. You need air to circulate between each sprout for them to crisp up. Cook them in two or more batches if you need to.
- Do not add any additional seasoning while roasting. Seasoning burns at high heat and tastes bitter. So sprinkle or drizzle it immediately after the sprouts are done cooking.
