Mashed Potato Bombs

I wanted to make an appetizer that was the essence of Thanksgiving. I thought about it and thought about it and finally the recipe light bulb went off and the idea for these Mashed Potato Bombs were born. This is a recipe anyone can make and you don’t need any fancy equipment or ingredients to make them but people will be so impressed they will think you are a professional Chef.  This recipe uses instant potatoes. You are doctoring them up with sour cream and cheese and because of their smooth texture, they work better in the piping bag.  Here is what you will need for these Mashed Potato Bombs that will dress up your holiday dinner party.

Ingredients

  • 1 Box of Instant Mashed Potatoes, prepare the serving size for 6 and follow the package directions for preparing omitting the milk. (you will use only salt, butter and water)
  • 1 C of Shredder Sharp Cheddar Cheese
  • 3/4 C of Sour Cream
  • 1 t Black Pepper
  • 1 T of Paprika
  • 3 T of Water
  • 1 Whole Egg and 1 Egg Yolk

You will need mini muffin pans for this dish. If you do not have them, use a cookie sheet and line it with parchment paper. Your bombs wont be as high as the mini muffin tin variety, but they will be just as tasty. The mini muffin tins will make 24 bombs.

The steps are as follows:

  • Mix the cheese and sour cream with the prepared potatoes, stir well until combined. Add the black pepper. Let the mixture cool to room temp.
  • In a separate bowl whisk together the whole egg and egg yolk. Fold into the potato mixture once it is cooled to room temp.
  • Next, take a ziploc bag and add the potato mixture to one corner of the bag.
  • Spray your mini muffin tins with spray oil.
  • cut a small tip off the corner of the bag and fill each circle in the tin with the mixture. I make an up and down motion with the bag to make layers.
  • In a bowl, combine the paprika and the water and mix into a paste.
  • Use pastry brush to lightly brush the potato puffs .
  • Heat oven to 350 degrees and place the pans in the oven. Bake for 30 minutes, in the last 2 minutes of cooking turn on broiler and broil for 2 minutes keeping a close eye they don’t burn.
  • Remove from oven and let cool for 15 to 20 minutes, then lift each bomb from the pan carefully.

This is a great appetizer for any holiday party. These are absolutely delicious. If you want to make these as a side dish you can make them in larger muffin tins. If you use parchment paper on a cookie sheet just pipe the mixture onto the parchment paper in circles and bake the same way.
