popsicle variations

You can use this same recipe using other berries such as blueberries, blackberries, and raspberries, or try a mixed-berry blend. Fresh herbs add another lovely dimension of flavor. Also, you can add herbs like fresh mint or lavender. Or add a bit of heat with a dash of cayenne pepper!

Recipe notes and tips

  • Use any other berries of your choice. Also, you can make a mixed blend if you like
  • For a vegan-option: use coconut milk. We recommend using the canned coconut milk.
  • If you do not want to use sweeteners, you may use honey or any sugar of your choice.
  • The popsicles should be frozen for at least 8 hours or overnight.
  • Run them for a few seconds over warm water and remove carefully from the mold.
  • The popsicles might be too hard for some to bite through, let them sit for a few minutes to soften up.
  • The sticks should stay in the middle, if not, don’t worry, place them in the freezer check in an hour later, and move them slightly towards the middle. The popsicles should be thickened by then.

Storing rEcommendations

These popsicles need to be frozen and cannot be left on the kitchen counter. Keep them in the mold and the freezer if possible. They can be frozen and stored for up to 2 months.

Frequently asked questions

How do you make homemade popsicles softer?

The key to softer and non-icy popsicles is to add some sort of yogurt like Greek yogurt or full-fat coconut milk.

How do you make homemade popsicles that aren’t rock-hard?

If your popsicles aren’t creamy or milk-based, then we recommend that you add a tablespoon of cornstarch. This will prevent the popsicle from being too icy and hard to eat.

What can I use instead of popsicle sticks for popsicles?

If you don’t have popsicle sticks don’t worry. There are other things that you can use in place of popsicle sticks. You can use reusable paper or metal straws.
