A Simple and Savory Classic

Mr. Tipsy has been suggesting I make this Smoked Sausage and Egg Noodles dinner for years.

It always sounded so weird to me and I couldn’t understand why he kept asking me to make it.

Folks, the mystery has finally been solved. It turns out the reason is a very sweet one.

I came to find out, after more than a decade together, that this is a dish his Mom used to make for him. His Mom is no longer with us, but her food was a legacy she left us.

Before she passed she gave me her cookbook bible, the one you use to slip all the recipes you cut out of magazines and the ones you ask friends for that are written on little slips of paper after sampling something delicious they made.

These kind of food bibles existed before the internet and are truly treasures of a time gone by. When he asked me to make this Smoked Sausage & Egg Noodles dish I took to his Mom’s food bible to find the recipe and I lucked out.

There it was, written on a cute little printed recipe card. It meant so much to me to able to make this for him and carry on her legacy as welll.

The recipe for this easy dish is as follows.

Ingredients:

  • 1 Bag of Egg Noodles, I used the regular size, but if you prefer extra wide those work too.
  • 1 Package of Eckrich Smoked Sausage
  • 1 Medium Yellow Onion, Diced
  • 2 t of Nutmeg
  • 1/4 C of Brown Sugar
  • 4 T of Butter
  • 1 t of Salt
  • Fresh Black Pepper
  • 1 T of Dried Parsley

The steps should only take you about 20 minutes from start to finish and this recipe will feed a family of 4 with leftovers. Here is what you do.

Instructions:

  1. Set water to boil the noodles and boil according to package.
  2. In a skillet, add the butter, allow to melt on low and add the onions, brown for a couple of minutes.
  3. Add the nutmeg, salt and brown sugar and allow the onions to caramelize in the butter.
  4. Slice the sausage into one inch slices and then quarter the slices.
  5. When the onions are a deep brown color, add the sausage and brown until all the pieces have a slight crisp to them.
  6. Your noodles should be cooked at this point. Using a pasta spoon I add them to the sausage skillet a little at a time, lifting the noodles out of the pot and draining a bit. It is ok if a little water gets in the skillet. Repeat this process until all the noodles are added.
  7. Toss the noodles around until they are coated in the butter and onions.
  8. Sprinkle the dish with black pepper and the dried parsley.

This dinner is a great weeknight meal when time is of the essence. I was quite surprised with how flavorful it was after only a few minutes of prep and cook time.
