I make this Keto Meatloaf often for my family and figured it was about time I updated the recipe because I have been making it a little different and find it works even better! I don’t always have pork rinds on hand so I have switched those out for almond flour, and then have been grating the onion instead of just dicing it. These changes have made the meatloaf easier to throw together and produces a juicer low carb meatloaf.

Why it works

  1. Low carb ingredients are used in this recipe to create a Keto Meatloaf that comes out at just 3.5 g net carbs per slice!
  2. Ketchup and shredded onion work together to create a super juicy meatloaf, and the worcestershire and dijon combine with the other flavours to make a keto meatloaf that is absolutely delicious.
  3. This Low Carb Meatloaf is very easy to make, all you’ll need is about an hour and you’ve got yourself a meal the whole family will love!

Keto Meatloaf Ingredients

Meatloaf

  • ground beef
  • almond flour
  • onion
  • eggs
  • no sugar added ketchup
  • worcestershire
  • dijon mustard
  • garlic
  • dried parsley
  • ground black pepper
  • sea salt

Glaze

  • no sugar added ketchup
  • apple cider vinegar
  • worcestershire

No Sugar Added Ketchup – There are lots of brand to choose from who make ketchup with no added sugar. It is important to buy no added sugar ketchup because most standard ketchups are loaded with sugar!

How to make Low Carb Meatloaf

Preheat oven to 350°.

Add almond flour to a medium sized mixing bowl and then grate an onion over top. Mix the onion into the almond flour until fully combined.

Peel the garlic and either finely mince it or push it through a garlic press, then add it to the almond flour with the eggs, 1/4 cup no sugar added ketchup, worcestershire, dijon, eggs, parsley, sea salt and pepper. Mix and then knead in the ground beef until well combined.

Shape the meat into a log, place inside a loaf pan and then smooth the log so that it is even and without cracks. Mix the glaze ingredients together and brush half of the mixture onto the meatloaf.

Cover the meatloaf with tin foil and bake for 40 minutes. Remove the tin foil and discard any fat that may have surfaced during baking. Brush on the second half of the glaze.

Bake, uncovered, for 10-15 minutes, or until the internal temperature reaches 165°. Cut the keto meatloaf into 8 slices and serve hot.

Expert Tips

  1. Grating the onion rather than dicing it up will make the meatloaf juicer.
  2. I prefer to use a garlic press rather than mincing the garlic because it’s faster and gives more of an even flavour.
  3. Be sure to work the meatloaf well enough, or it might end up crumbling apart after it’s been baked.
  4. Use a digital meat thermometer to ensure the internal temperature of the keto meatloaf has reached 165°.

Leftover Meatloaf Sandwich

Got leftovers? I usually have at least one slice of keto meatloaf leftover and LOVE to turn it into a Leftover Meatloaf Sandwich!

Start by making a 90 Second Keto Bread, then slice that leftover meatloaf in half horizontally and microwave for 60 seconds or until the internal temperature reaches 165°. Heat up a sandwich grill.

Spread mayo and ketchup if desired on each piece of keto bread, add sliced cheese and the meatloaf to the bottom bread and sandwich with the top bread. Grill for a few minutes and enjoy!

  • 1 tbsp dried parsley
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 3/4 cup almond flour
  • 1.5 lbs ground beef
  • 2 eggs
  • 1/4 cup sugar free ketchup
  • 1 tbsp Worcestershire
  • 1 tbsp dijon mustard

Glaze

  • 6 tbsp sugar free ketchup
  • 1 tsp Worcestershire
  • 1 tbsp apple cider vinegar

        If a comment section I see that someone mentioned pork rinds as a binder and I don’t see any on the recipe?

          Hey Laurie, I used to bind this meatloaf with pork rinds. After many times of making it, however, I found I was using almond flour WAY more often because I always have that on hand and not the pork rinds. That is the reason I swapped ingredients. If you prefer using pork rinds, you’ll need 3/4 cup crushed pork rinds.
