I tend to struggle when it comes to offering a good variety of vegetable sides with dinner. For one, I’m just flat out fussy when it comes to cooked veggies, and two, I have a very hard time straying from this addicting broccoli. It’s tossed with olive oil, garlic salt, and nutritional yeast to give it the salty, cheesy, and savory goodness you want with your proteins. In this house, we could devour it as a dinner side every night. In fact, we often skip a starchy side all together so we can fill 2/3 of our plate with this good stuff. Obsessed much? A little.

Four Simple Ingredients for the Best Veggie Side.

 A side dish should be unfussy, involving little prep and a short ingredient list. All you need to throw this one together is the following:

  • Broccoli crowns
  • Olive oil
  • Garlic Salt
  • Nutritional Yeast

What Is Nutritional Yeast?

Nutritional yeast is a deactivated form of Saccharomyces cerevisiae, better known as baker’s or brewer’s yeast. If you enjoy cooking at home and find yourself dabbling in plant-based recipes, you’ve probably heard of it. Its cheesy, nutty, and creamy flavor makes it a popular condiment among vegans and vegetarians—but everyone can benefit! These golden flakes are a significant source of some B-complex vitamins and they contain trace amounts of various other vitamins and minerals making nutritional yeast a smart dairy-free alternative to cheese. It won’t substitute cheese in all cases, but in some sauces, soups, dips, eggs, and veg sides, it works like a damn charm. If you can’t find nutritional yeast, there are substitutes.

How to Make Oven-Roasted Broccoli With Nutritional Yeast

This veg side is super unfussy. Here’s how to make it:

  1. Preheat the oven to 425º F with a rack positioned to the middle and place some foil or parchment down onto a baking sheet. (You don’t have to cover the baking sheet, of course. But it makes for easier clean up.)
  2. Cut the broccoli florets into bite-sized pieces and place them into a colander. Run them under cool water for a quick rinse, then shake them dry and transfer them to a mixing bowl. Drizzle them with some olive oil, then give them a sprinkle of garlic salt and nutritional yeast.
  3. Cover the bowl with either a lid, or some tin foil, and give it a good shake to evenly distribute the oil and seasoning.
  4. Transfer the broccoli to the baking sheet, spreading the florets out; sprinkle a little extra nutritional yeast on there.
  5. Pop them into the oven and bake them for about 15-20 minutes, tossing them halfway through. When you remove them from the oven they should be tender and lightly golden.

Recipe Tips + Tricks.

  1. I use garlic salt as opposed to fresh garlic because chopped fresh garlic burns easily in the oven on a sheet pan, which results in bitter bits, and you also get more of an even coverage. There’s an odd time and place for garlic in the culinary world, and in my humble opinion, this is it.
  2. I’ve tried this recipe with avocado oil and it didn’t lend the same nice flavor that olive oil does, so I’d stick with olive oil for this one.
  3. This broccoli easily lends itself as a side on a sheet pan meal! Simply time it with any of your other ingredients, adding it to the pan for the last 15-20 minutes of cooking.

Ingredients

  • 1 large head of broccoli; approx 4 heaping cups of broccoli florets
  • 1 TBSP olive oil, a bit more if necessary
  • 3 TBSP nutritional yeast
  • 1/2 tsp garlic salt, give or take
  • Cracked black pepper (optional)

Instructions

  • Preheat oven to 425° F; cover a baking sheet with tin foil or parchment paper (optional but makes for easier cleanup.)
  • Cut the broccoli into bite-sized florets. In a colander, rinse them off and give them a good shake to dry them off; transfer them to a large bowl.
  • Drizzle the florets with the olive oil and sprinkle them with 2 TBSP of nutritional yeast, followed by the garlic salt. With a large spoon, give the broccoli a good toss in order to evenly coat the florets. You could also cover the bowl and shake the contents until evenly coated. When done, spread the florets out onto a baking sheet. Sprinkle the rest of the nutritional yeast over the broccoli florets. 
  • Bake in the oven for 15-20 minutes, tossing the broccoli halfway through.
  • Season with a bit of extra garlic salt if needed, and cracked black pepper if desired.
