Spinach Crust Veggie Pizza

Happy Saturday guys! Today’s recipe is Spinach Crust Veggie Pizza – loaded with yummy veggies on a hidden spinach crust. 🤣

Spinach Crust Veggie Pizza

I managed to disguise spinach into a pizza and the kiddies loved it. Actually, one of them loved it, the other one was not really keen. I thought this was amazingly tasty and I’ll be making it a lot for sure. It kind of tasted like a salad on a pizza.  I’ve used some spinach in the pizza dough hence the green colour and the healthier pizza, I hope. 🙂 For the toppings I’ve used marinated red peppers, corn, Mozzarella cheese, black olives and Cheddar cheese – absolutely loved the combination. Overall, it was super juicy pizza loaded with veggies. Of course, I had to have it with lots of hot sauce. 🔥 I think I’m actually getting hungry now just looking at the photo. 😋

The dough couldn’t be simpler – I haven’t added any yeast or baking powder as I wanted it to be really thin and more like wrap really, not like actual pizza dough as it turned. 😀 But I really like it that way.

This was our dinner on a crazy busy school day and it took be about 20 minutes so it’s definitely a ‘mummy’ friendly recipe. 😆 I don’t know about you, but it seems I spend my days doing school runs, collecting kids from nursery/school, cooking in between, oh and jiggling a little chubby baby meanwhile. 😂 Yep, life’s hectic at the moment but it is all worth it and I try to convince myself this is my special mission.
