Happy Monday guys! Today’s recipe is Simple Shrimp Chow Mein  – forget the takeaway, this only takes a few minutes and is not only tasty but healthy too.

My kids love noodles and I make quite often the  Pork & Vegetables Soba Noodles. However, this time I wanted to make it a bit different so I came up with this. The Chow Mein recipe calls for oyster sauce but I only used soy sauce as the little one don’t approve the oyster one. There’s also broccoli, peppers and baby corn, apart from the shrimp/prawn. The shrimp I used was already conveniently cooked for me so that was great! I just added it to the veggies and noodles.

This dish is so simple and so quick I can make it everyday, no problem. It’s honestly one of my quickest dinner recipes to make. All you do is boil the veg and noodle together for about 3-4 minutes, fry the pepper for a couple and combine everything together with the sauce. It’s probably no more than 10 minutes which makes it perfect for a busy weeknight dinner. And let’s be honest, it tastes so much better than the takeaway and you get a generous portion of veggies. Make sure not to overcook the veggies though. I just can’t deal with overcooked veg. Blah 😖 But it happens, sometimes, oops, so just be careful.

I actually used quite a lot of broccoli. However, the pepper I used was only one but I’d definitely go for a couple next time. It just gives an extra crunch to the dish and we all like our stir fries, noodles, etc., with lots of crunchy veggies.
