A Modern Approach to an Old Classic

If you’re in the Midwest like me, you are probably sweating to death while reading this.

Even though it is hot and the humidity is at 150%, fall will be here before you know it. Regardless of the heat I have nothing but fall comfort foods on my mind.

It’s funny, but I think sometimes the foods we hated as kids can become our favorite. Kids tend to be pickier, but as adults we’re often nostalgic for the smells and tastes of our youth.

For example, as a child I despised pot roast but now it is one of those things I crave.

It is such a great Sunday dinner and makes great leftovers to bring for lunch or to have during a busy work week.

If you are home cooling off, make your Sunday a fun day by making this pot roast in your Instant Pot. IF you don’t have an Instant Pot, you can make this in the crock on low for 6 to 8 hours and toss the dumplings in for the last hour of cooking.

Here is all you need.

Ingredients:

  • 1 three to five lb Chuck Roast
  • 1 Onion Soup Packet
  • 2 Packets of Brown Gravy
  • 2 Medium Yellow Onions, Quartered
  • 4 to 6 Carrots, Peeled and Sliced
  • 2 White Potatoes, Peeled and Quarterd
  • 2 C of Beef Broth
  • 1 T Garlic Powder
  • 1 T Onion Powder
  • Salt and Pepper to taste
  • 1 Package of Chateau Foods Potato Dumplings

This recipe couldn’t be easier.

These instructions are for the Instant Pot but if you don’t have one, follow the same steps for a crock and cook on low for 6 to 8 hours then toss the dumplings in at the end.

If you want to make this in your oven, place all the ingredients in a covered casserole and bake at 350 degrees for about 2 hours. Boil your dumplings according to the package and add to the dish when serving.

For the Instant Pot, it is just two steps.

Instructions:

  1. Place everything in your instant pot except for the dumplings.
  2. Cook on high pressure for 30 minutes.
  3. Release the steam.
  4. Separate the potato dumplings and place throughout the pot.
  5. Cook on high pressure for 6 minutes.
  6. Release the steam and serve!

This recipe was fantastic.

We enjoyed this for dinner and I made sandwiches with the leftover meat for lunches for the week. The potato dumplings in the gravy add an amazing texture and layer of flavor and also help thicken up your gravy.

This can even be a weeknight meal since it takes less than 40 minutes to prepare.

Instant Pot recipes are the best. You can throw it in your crock in the morning and come home to a hearty meal as well.
