This is a simple Meatless Monday recipe that takes no time at all! Even the kiddos will eat them! Top it how you want, my toppings are just a suggestion. Get creative!
Ingredients
2 Can of Chickpeas, Drained
1 Head of Iceberg Lettuce, Washed
2 Large Carrots, Grated
6 Scallions, Sliced to Desired Thickness
1 Purple Onion, Minced
1/2 C Roasted Peanuts, Crushed
4 T Hot Bean Paste, Divided
1/2 C Rice Wine Vinegar
1/4 Olive or Sesame Oil
White Pepper
- Drain Beans, Rinse and place in a large bowl with the oil, Vinegar, and half the bean paste, toss to coat. I recommend they sit for at least two hours at room temp.
- Set up your Lettuce wrap bar using small bowls to display the toppings, set up Lettuce leaves on a pretty platter.
- Let the family Serve themselves!
*You can decide whatever toppings to serve. A good rule of thumb is to add at least three colors of veggies and something nutty and/or crunchy like the peanuts. Also alternate how you prep the veggies. I like to vary a dice, mince, shred and rough chop so your wraps have different textures.
