Sure, you could get up every morning and stare at the fridge, wondering what to eat and willing yourself to just pick something. But I know from experience that often results in the ill-fated “coffee for breakfast” scenario.

This simple breakfast bake can be made ahead of time so you can just throw it in the microwave or even take a portion to work with you. If you’ve got a large family, you can bake two at once.

Ingredients

  • Olive oil to cook with
  • 1 onion, chopped
  • 1 lb sausages, casings removed
  • 12 oz spinach
  • 1 bell pepper, chopped
  • 4 Tablespoons fresh basil, chopped
  • Salt and pepper to taste
  • 6 eggs
  • 1 bag (20 g) of pork rinds (optional), lightly crushed
  • 2 Tablespoons sliced almonds (optional)

Instructions

  1. Preheat oven to 400 F.
  2. Place 2 tablespoons of olive oil into a frying pan. Add in the onions, bell pepper, and sausage and cook until onions are translucent and the sausage meat is cooked.
  3. Add in the spinach and chopped basil. Cook for 1-2 minutes more.
  4. Pour the sausage mixture into a 9 by 9 baking tray.
  5. Make 6 indentations in the mixture and crack an egg into each indentation.
  6. Bake the mixture (uncovered) until the egg whites are solid but the yolk is still runny. This takes around 15 minutes.
  7. Sprinkle crushed pork rinds, sliced almonds, and salt and pepper on top.
