A few weeks ago I made Lemon Blueberry Granola. It was so easy that my three year old son could give me legit help in making it. And, it was hands down better than most granolas I have purchased. I cannot think of a reason that I shouldn’t always make my granola.

I went through that batch of granola quickly. Embarrassingly quickly. It was a pretty large container I made, and between breakfast, mid morning snacks, afternoon snacks, and evening photo editing snacks, it was gone in just a few days. It’s always the worst when something like that disappears and you know you’re the only one eating it. It reminds me of an incident that happened in 2011 ….it was just before I was married, and I was living with my friends Mark, Kelly, and Tim for a year. One night I made a big, delicious orange fluff dessert (Dania, if you’re reading this, it was your recipe). I told everyone in the house about it, and suggested they try it.

The next night, we were all in the kitchen and someone mentioned wanting to try it, but said there was only a spoonful left. I said something along the lines of, “Of course it’s gone! Everyone ate it and loved it!” Slowly everyone started saying, “No, I didn’t get to try it.” Then it hit me …. no one else had eaten it … it was only me. As I started thinking back through the day, I realized that all my trips to the fridge for a spoonful had quickly added up.

My recent granola intake was reminiscent of ‘the orange fluff incident of 2011’. I can accept that though, there are worse vices than granola.

So that lemon blueberry granola was so good that it took me a while to decide what type of granola I should make next. But, since it’s summer, and that’s a great time for tropical vibes, I decided that tropical granola was the answer. I like this recipe so much, that I have made it twice over the last week. I imagine there will be many more delicious granola recipes coming down the road, but don’t expect them too soon. I plan on eating all the tropical granola I can handle for the foreseeable future.

Ingredients

  • 2 cups old fashioned oats
  • 2 tbsp hemp seeds
  • 2 tbsp flax seeds
  • 1/2 cup dried cranberries chopped
  • 1/2 cup dried pineapples chopped
  • 1/4 cup coconut
  • 2 teaspoons vanilla extract
  • pinch salt
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 1/4 cup honey

Instructions

  • Preheat oven to 300 degrees. Line a large baking sheet with parchment paper or a silicone mat.
  • In a medium sized bowl, use a fork to whisk together vanilla, salt, coconut oil, maple syrup and honey.
  • Then, stir in oats, hemp seeds, flax seeds, cranberries, pineapples, and coconut. Stir until well combined.
  • Spread mixture in even layer on prepared baking sheet. Bake for 35 minutes, stirring every 10-12 minutes.
  • Let cool completely before serving. Store in airtight container.
