Chocolate Trail Mix Bites

These no-bake little trail mix bites contain nuts, dried fruit and chocolate and are the perfect pick-me-up snack!

The week before school starts is always so busy 🙁 I went to Seattle a few weeks ago with the fam for a little hiking adventure and made these cute little sweet treats to bring along. No baking required! We snacked on most of them on the plane ride (oops!) but there were still a few to take on hikes! They make a great snack since they have nuts, dried fruit and of course chocolate!

It’s a fairly simple recipe using common trail mix ingredients. I cut up some dried apricots and dried cherries into smaller pieces. I also poured out some raw almonds and cashew pieces, dried cranberries, white chocolate chips, and honey roasted peanuts! You can use any sort of trail mix ingredients–chocolate covered raisins or pretzel pieces would be awesome in these.

Once you’ve laid out the different ingredients you want to use I melted 1 cup of semi-sweet chocolate chips. I put the chips in a microwave safe bowl and melted them in increments of 30 seconds. After each 30 seconds stir so the chocolate doesn’t burn. It should take about 1 to 2 min for everything to melt.

Once it is nice and smooth, use a spoon to spread out a thin chocolate layer on parchment paper or a silicone mat on a baking sheet.  Make each circle about 1 inch or so wide.

Now all that is left to do is add your toppings. I made some with almonds, chocolate chips, dried cranberries and cashew piece. I also made some with apricots, honey roasted peanuts and dried cherries. You can do whatever you’d like-be creative!

IMG_3167That’s it! Now just let them sit on the baking sheet at room temperature until hardened and then gently peel them off. If you’re in a rush you can pop them in the fridge too to harden quickly. Put them in a tupperware if you are not going to eat them right away. They should keep for about 3-4 days.

They are a great after school snacks for kids (don’t let them eat too many!) or a small dessert after dinner. They’re healthy too! More or less 😉

Ingredients

  • 1 cup semi sweet chocolate chips (can also use dark or milk)
  • 1/4 cup raw almonds
  • 1/4 cup dried apricots
  • 1/4 cup dried cranberries
  • 1/4 cup dried cherries
  • 1/4 cup raw cashew pieces
  • 1/4 cup white chocolate chips

Instructions

  1. Chop the dried apricots and dried cherries into smaller pieces.
  2. Melt the chocolate chips in a microwave bowl in 30 second increments until fully melted. It should take about 1-2 min.
  3. On a baking sheet lined with parchment paper or a silicone mat, spread out a thin circle of chocolate about 1 inch wide using a spoon.
  4. On each chocolate circle, add a variety of nuts and dried fruit.
  5. Let the chocolate circles harden before you remove them from the baking sheet. You can also place them in the freezer to harden quickly.
  6. Keep in a tupperware for about 3-4 days.
