Raise your hand if you don’t like french fries. Ok, now go away. This post isn’t for you. This recipe on Air Fryer Fries With Roasted Garlic and Parmesan is only for cool people.

What is an Air Fryer?

Basically, an air fryer is a small countertop convection oven that uses really hot circulating air to cook/crisp food up considerably. But because the food rests in a basket with holes in the bottom, the air is able to flow all around the items. Which makes for even cooking. And kick ass crispiness.

Is the Air Fryer Really Healthy?

Sure is! You can make your favorite crispy and fried foods with little to no oil. Most air fryer recipes use less than 1 tablespoon of oil to achieve crunchy perfection. Booyah!

Do I Have to Put Oil in The Air Fryer?

You won’t add a metric butt-ton of oil to it like you would a deep fryer, but spritzing the inside of the basket with a little oil olive can help keep food from sticking. I use my Misto for this and also for spraying certain foods with olive oil throughout the cooking process (like Air Fryer Tofu).

What is The Best Oil to Fry French Fries?

I prefer a mix of olive oil, avocado oil, and truffle oil. But really just use whatever you have on hand and is your favorite.

How to Make Air Fryer French Fries – Step by Step

  1. Peel potatoes. If the potatoes you’re working with are large, cut them in half widthwise. Hold the potato steady and cut 4-6 cuts lengthwise. Then grab a few of the pieces and cut those into smaller slices. See photo below. But I mean, you have seen fries before, right? You know what they look like. Unless of course you’re an alien and have never encountered fries. In which case, welcome. Cheese is also delicious. Try some of that.   2. Add your oil to the bottom of a medium-sized bowl. Place the sliced potatoes in and toss to coat. You may season with salt now if you’d like. I prefer to do so at the end.
  3. Mist olive oil in the basket of the air fryer. No olive oil spray? You can use a pastry brush or a paper towel dipped in a little olive oil instead. Add the fries.
  4. Bake at 390 for 9 minutes. Toss, and bake for another 8 minutes. Toss, and bake until it is your desired level of crispiness. Mine take a total of 25 minutes. Use tongs to test the doneness of the fries towards the end. Some of the potatoes won’t look brown, but they may still be crispy.

  5. Once the fries are just as crisp as your heart desires, remove the air fryer basket and move the fries to a dish. Salt them if desired and top with your favorite seasonings.

What Can I Use to Season Air Fryer French Fries?

The possibilities are endless for adding additional flavor to the base recipe! I love using roasted garlic and garlic salt. Try dill, lemon pepper, seafood seasoning, or seasoning salt. If you’d like white cheddar flavor, I highly recommend nutritional yeast. It’s a vitamin powerhouse, vegan, and delicious.

What If I Don’t Have an Air Fryer?

You can still make yummy potatoes in the oven but it will involve longer baking time and more oil. See the printable recipe card at the bottom for more details.

Recipe Notes

  • Do you have to peel the potatoes first? Not really. You can leave the skin on if you’d like, but please make sure it is well scrubbed beforehand.
  • Potatoes are on the Dirty Dozen list, so if you can find space in your budget for organic, I highly recommend it!
  • Toss the potatoes prior to baking in 2 tbsp of potato starch for an even crispier coating!
  • Do you need the truffle oil? No. It’s one of those specialty ingredients that can be hard(ish) to track down. I buy it online and it is amazing added to multiple dishes. But it’s not necessary. You’ll still have great french fries without it. The truffle oil just makes them amazing.
  • Should you soak the potatoes first? Maybe. Many recipes call for soaking the cut potatoes in ice water for 20 minutes and then patting them dry. The water removes the starch from the potatoes which helps make super crispy fries. For me, soaking doesn’t make a big enough difference to justify the extra step and time. But you could always try it both ways and see which you prefer.
  • That being said, if you want to cut the potatoes ahead of time, keep them submerged in cold water, drain and pat dry prior to cooking. The cold water will keep the potatoes from browning. I use this trick for prepping the Best Mashed Potatoes You’ll Ever Make ahead of a big holiday event.
  • Use tongs to test the doneness of the fries towards the end. Some of the potatoes won’t look brown, but they may still be crispy.
  • The recipe uses two Russet potatoes. If you’d like to increase the recipe that is fine but you’ll need to double the oil and cook everything in two batches.

  • Preheat oven to 435 degrees. Place rack on bottom third of the oven.
  • Follow step 1 above. Place potatoes in a single file on a rimmed baking sheet and heavily spritz with olive oil. Like a lot. 
  • Bake for 25 minutes, flip. Spray heavily with more olive oil and bake until crispy. Mine usually take almost an hour.
