Chili Lime Smoked Shrimp and Pineapple Skewers and Giveaway

Spicy and tangy smoked shrimp with sweet pineapple is perfect served as an appetizer or on a bed of brown rice for dinner. As the second recipe for #CookoutWeek 2017 I made some summery pineapple and shrimp skewers. Earlier in the week I posted a caramelized peach caprese salad with tangy balsamic glazeFor today’s post, I used this cool new product from Smokin O’s. They are small pieces of compressed recovered orchard and hard wood that you can use on a gas grill to give a wood fired smoky taste. Check out Smokin O’s instagram and you can see other cool recipes and ideas to use too! I tried out the Applewood flavor but they have Original and Mesquite as well. The Applewood added such a sweet and smoky aroma to the skewers that was perfect and easy to do on our gas grill. All you have to do is take a Smokin O and place it on the grill until it smokes. Then, you move it to a cooler part of the grill and cook up your food as usual.

To start, you will want to buy raw large or jumbo shrimp. I shelled and deveined them myself but kept the tail on. After rinsing them off, I zested and squeezed in the juice of one lime, added in a little salt, pepper, 1/2 tsp of sugar (it helps the shrimp turn golden brown before they overcook) and 1 teaspoon of Trader Joe’s Chili Lime seasoning. You can totally make your own (it’s really just chili powder, onion powder, garlic…) but this seasoning blend is fantastic. I let them marinate in a bowl for about an hour. You don’t want to marinate seafood in citrus juice for too long otherwise the acid will break down the protein and it will become ceviche 😉

If you are using wooden skewers, make sure to let them soak in water for at least 30 minutes so they don’t burn on the grill.chili lime shrimp and pineappleI cut up chunks of red pepper and fresh pineapple to add a little sweetness to our tangy and spicy shrimp! I also sprinkled a little more chili lime seasoning over the pepper and pineapple too.chili lime shrimp and pineappleI preheated the grill and then put an Applewood Smokin O on top of the grates. After letting it sit there for about 6 minutes with the top closed, it started to smoke so I moved it to a cooler part of the grill and placed the skewers over direct heat. Grill the shrimp for about 1-2 minutes (until they turn light pink) before turning the skewers. Chili Lime Smoked Shrimp and Pineapple Skewers and Giveaway

Spicy and tangy smoked shrimp with sweet pineapple is perfect served as an appetizer or on a bed of brown rice.

Ingredients

  • Applewood Smokin O
  • 1 tsp chili lime seasoning
  • 1 lime (zested and juiced)
  • 1/2 tsp sugar
  • 1 pound of fresh pineapple or frozen pineapple chunks
  • 1 pound raw shrimp (peeled and deveined with tail on)
  • 1 red pepper (cut into chunks)
  • cilantro
  • skewers
  • salt
  • pepper

Instructions

  1. 1.) Combine the lime zest, juice, sugar, and chili lime seasoning in a medium bowl.
  2. 2.) Add in shrimp and mix well.
  3. 3.) Add in salt and pepper to taste. Let marinate in the fridge for an hour.
  4. 4.) Soak wooden skewers in water for 30 minutes.
  5. 5.) Thread shrimp, pepper, and pineapple onto skewers.
  6. 6.) Put Smokin O onto preheated grill. After it begins to smoke, add skewers onto direct heat.
  7. 7.) Cook shrimp for 1-2 minutes per side until pink. You can baste with remaining marinade if you wish.
  8. 8.) Serve as an appetizer or entree with brown rice. Garnish with cilantro.
