Big Mac Meatballs, a Recipe to Handle Your Fast Food Craving

A Big Mac is the best isn’t it?

And yet… there’s really too much bread in there.

Who needs all that extra bread?

Not to mention that whenever we do splurge on McDonald’s it just doesn’t taste that great anymore.

Except the Coca-Cola, why is it so good at McDonald’s?!

Anyway, I knew that there had to be a better way to handle that craving.

Mr. Tipsy tries to eat low carb when he can so I decided to challenge myself with recreating the Big Mac at home with no to low carbs. I took all my favorite parts of a Big Mac and created these Big Mac Meatballs.

I was shocked how easy it was to get it just right. I tested out this recipe on Mr. Tipsy and he couldn’t believe how much they tasted like a Big Mac.

This recipe only took thirty minutes to prepare and cook and used very few ingredients. In fact, you probably have most of them on hand.

Check out the recipe below:

Ingredients:

  • 1 lb of ground beef
  • 6 slices of Kraft American cheese, cut into quarters
  • 1 Medium White Onion, minced, reserve some for topping
  • 2 Eggs
  • 3 T of Sweet Relish
  • 1/4 C of Thousand Island Dressing, plus 1/4 C for topping
  • 10 to 15 Dill Pickle Hamburger Chips
  • Leaf Lettuce
  • 2 T Sesame Seed
  • Salt and Pepper
  • 1 T each of Garlic Powder and Onion Powder

Now on to the instructions. The steps are so easy!

Do note that you’ll need to let the raw mixture sit in the fridge for at least an hour, so you’ll want to start well in advance of when you plan to actually prepare the dish.

Instructions:

  1. Combine the meat, American cheese, eggs, onions, 1/4 C of Thousand Island, and the sweet relish in a large bowl.img_1541-1
  2. Mix well and add salt, pepper, garlic powder, and onion powder.img_1544
  3. Form the mixture into about 12 balls. You will need to push the cheese into the meatballs and form the meat around the cheese.img_1547
  4. This step is VERY IMPORTANT: place the meatballs on a cookie sheet and let rest in the fridge for one hour or even overnight.
  5. To cook, heat a cast iron skillet to high heat, add a little bit of olive oil, and cook the meatballs in batches. Some of the cheese will leak out while cooking.
  6. To serve, add leaf lettuce to each bowl, place three meatballs on top, then top each meatball with a teaspoon of thousand island, minced onion, and sesame seeds.
  7. Finally add pickle slices to each bowl.

I think you will find that this recipe becomes one of your most requested meals. These meatballs make a great dinner, lunch, snack, or party food.

You can also make a large batch of these meatballs and freeze them before cooking so you have a fresh meal on hand.

I’ll still have to work harder to crack the mystery of their Coca-Cola… oh well!
