I have been eyeing a specific recipe for these Brownie Cheesecake Bars for some time now. It has been sitting in one of my Pinterest boards for a couple of months.

And now I am only regretting waiting this long before I tried the recipe.

For once, some of our stores were quick in stocking up with Easter goodies and once I saw these pretty (elegant almost!) Easter Eggs, I knew I wanted to make a special dessert.

Having the Black/Gold Easter Eggs on my kitchen counter for about a week, I remembered the Brownie Cheesecake Bars recipe from Mr. Food’s site. And immediately knew how I wanted these to turn out.

If you are curious about the flavor of these Easter Eggs, it is Rum, Raisin and Chocolate – very nice and around three per Brownie Cheesecake Bar is more than enough.

Ingredients
  

BROWNIE BASE:

  • 1 box Fudgy Brownie Mix
  • Ingredients required for the Brownie Mix (see box)

CHEESECAKE LAYER:

  • 250 g Cream Cheese plain, softened
  • 2 TB Soft Margarine
  • 1 TB Cornflour (Cornstarch)
  • 1 can (397g) Sweetened Condensed Milk
  • 1 Large Egg
  • 1 t Vanilla Essence

OPTIONAL:

  • Icing Sugar to dust
  • Easter Eggs to decorate

Instructions
 

  • Pre-heat the oven to 180 deg C (350 deg F) – line a 20 x 30cm baking dish with baking paper – let the paper hang over the edges to remove the baked dish easily
  • Prepare the Brownie Mix as per the instructions on the box – pour into the prepared dish
  • In a medium mixing bowl, beat together the Cream Cheese, Margarine and Cornstarch until fluffy – gradually add the Condensed Milk, Egg and Vanilla to the Cream Cheese mixture, whilst beating continuously
  • Pour the Cream Cheese mixture over the Brownie batter and bake 50 – 60 minutes until the top is light brown
  • Remove from the oven, let cool completely in the oven dish
  • Lift from the oven dish, dust with Icing Sugar (if using) and decorate with Easter Eggs (if using) – use a sharp knife to slice into bars and serve
