How To Make Italian Piadina With Mozzarella And Parma Ham

  1. To make this recipe you start with making the Piadina dough. First, put the flour and baking powder in a bowl. Now add water and olive oil and stir with a wooden spoon.
  2. Knead by hand into an elastic dough in about 5 minutes and let it rest for 5 to 10 minutes. This will activate the gluten in the dough which helps when rolling out the dough.
  3. Then divide the dough into 4 equal pieces.
  4. Roll the dough into a Piadina tortilla. If your dough shows a lot of resistance you need to let it rest a little more so it can relax and keep its shape when rolled.
  5. Now, preheat a skillet until hot. Bake the Piadina for 1 to 2 minutes per side without a baking product. Once your flatbread has dark spots it is done.
  6. Store them in a clean kitchen towel to keep warm
  7. To decorate your flatbread put shredded mozzarella on one half of the Piadina. Add a slice of Parma ham, sun-dried tomatoes, and some rucola/rocket salad.
  8. Now fold the Piadina and it is ready to serve.
