Because Piadina is an Italian flatbread. Decorated with lots of great toppings. Maybe a Piadina is slightly different than a regular tortilla but this flatbread is just as tasty. You can easily make these tortillas at home. So, are you ready to learn how to make Italian Piadina with Parma ham and mozzarella? Let’s get started!
What You Need For This Recipe
To make this Italian Piadina recipe you need the following basic ingredients:
- Flour – you can make these tortillas with all-purpose flour
- Water
- Baking powder
- A pinch of salt
To decorate you need:
- Rucola
- Mozzarella
- Parmaham
- Sun-dried tomatoes

How To Make Italian Piadina With Mozzarella And Parma Ham
- To make this recipe you start with making the Piadina dough. First, put the flour and baking powder in a bowl. Now add water and olive oil and stir with a wooden spoon.
- Knead by hand into an elastic dough in about 5 minutes and let it rest for 5 to 10 minutes. This will activate the gluten in the dough which helps when rolling out the dough.
- Then divide the dough into 4 equal pieces.
- Roll the dough into a Piadina tortilla. If your dough shows a lot of resistance you need to let it rest a little more so it can relax and keep its shape when rolled.
- Now, preheat a skillet until hot. Bake the Piadina for 1 to 2 minutes per side without a baking product. Once your flatbread has dark spots it is done.
- Store them in a clean kitchen towel to keep warm
- To decorate your flatbread put shredded mozzarella on one half of the Piadina. Add a slice of Parma ham, sun-dried tomatoes, and some rucola/rocket salad.
- Now fold the Piadina and it is ready to serve.
Italian Tortilla Recipe
Piadina can be considered the Italian version of a flour tortilla and this Piadina recipe is a lunchtime favorite. A Piadina is available all across Italy but unfortunately, it is not a recipe that is widely available in other countries.
So, what do you do when you can’t buy it in the store? You can just make this Italian Piadina yourself. It is a very easy recipe. Then add your favorite toppings and you have a great lunch recipe.
Further, this recipe contains olive oil and a little bit of baking powder to make the Italian Piadina soft and fluffy. Just like focaccia or ciabatta, this Piadina is a little thicker than your regular tortilla and more like bread.
So, to bake a Piadina you can use a cast iron skillet.

You can eat Piadina with savory toppings but are also great with sweet toppings. You can add:
- Parma ham
- Mozzarella
- Hummus
- Sun-dried tomatoes
- Guacamole
- Jam
- Homemade Nutella

Original Parma Ham And Mozzarella Italian Piadina
Original Parma ham and mozzarella Italian Piadina. Slightly different than a regular tortilla but this version is just as tasty.
Ingredients
- 200 g wheat flour
- ½ teaspoon baking powder
- 30 ml olive oil
- 80 ml warm water
- 4 slices of Parma ham
- 1 cup of grated mozzarella
- ½ cup of sun dried tomatoes
- 1 cup of rucola
Instructions
- Put the flour and baking powder in a bowl. Add water and olive oil and stir with a wooden spoon
- Knead for about 5-10 minutes into an elastic dough. Let the dough rest for at least 5 minutes
- Divide into 4 equal pieces
- Roll the dough into a Piadina
- Preheat a skillet and bake the Piadina for 1 to 2 minutes per side
- Put mozzarella on one half of the Piadina. Add a slice of Parma ham, sun-dried tomatoes, and some rucola
