Chickpea Flatbread Ingredients
To make this recipe you need a number of ingredients. Make certain you have the following ingredients available when you start this recipe:
- All-purpose flour
- Chickpea flour
- Garlic
- Parsley
- Scallions/spring onion
- Red onion
- Salt to taste
- Plant-based butter
- Almond milk

How To Make Chickpea Flatbread
To make the dough for this chickpea flatbread you can make it by hand but it can also be made in the kitchen machine.
If you make the dough by hand, it just takes a little longer to get a good elastic dough.
First, you have to dissolve the butter in the milk in a warm pan. Then put the flour, garlic, onion, and parsley in the food processor.
Now add the milk and butter mixture to the food processor as well.
Combine into a flexible dough in the kitchen machine. When done take the dough from the machine and wrap it in foil. Let it rest for 30 minutes.
Then cut it into 10 pieces the size of a large golf ball and knead each piece of dough thoroughly before you roll it into a tortilla.
Heat a skillet and brush with oil. Put in a flatbread and bake for about a minute or until you see dark spots on the chickpea flatbread.
Turn and bake the other side.
Keep warm in a clean kitchen towel and serve warm.

Great Flatbread Recipe
Soft vegan flatbread might be my favorite tortilla recipe but this recipe is a close second. It is great to eat on its own or with some dips you can eat it on its own or you can eat it with:
Eat homemade dip or with a curry. What makes these so special is the chickpea flour.
It has a nutty flavor that goes really well with the garlic and herbs in this recipe.
The reason why they are so soft is the vegetable butter and almond milk.
Make Chickpea Flour Yourself
If you can’t find chickpea flour in your local supermarket you can either make chickpea flour yourself from dried chickpeas.
Put the dried chickpeas in a strong kitchen machine or coffee grinder and let it run. You have to use a strong kitchen machine because it can break your machine.

I haven’t tried it but if you do not have dried chickpeas but only regular chickpeas you can make this recipe.
Put the chickpeas in your kitchen machine first to turn them into a paste and add it to your flour mixture.
How To Store Chickpea Flatbread
You have several options to store these tortilla flatbreads:
- Refrigerator – you can store them in the fridge for 2 to 3 days. Put the cooled flatbreads in an airtight container, aluminum foil, or in a resealable bag
- Freezer – you can also freeze the flatbreads for up to 3 months. Put them in a freezer-friendly food container or foil or a resealable bag
Make certain you have to cover them or else they will dry out. You can also store them in the freezer for a couple of months.
How To Reheat Garlic Herb Chickpea Flatbreads
You have several ways to reheat these chickpea flatbreads. If frozen you can either thaw or leave frozen.
- Oven – The oven is a great way to preheat multiple flatbreads. Wrap the flatbreads in foil while you preheat the oven to 400℉. Reheat the flatbreads for 7-8 minutes when frozen en 5-6 when thawed or until warm
- Air Fryer – you have a small number of flatbreads you can reheat in an Air Fryer. Preheat the Air Fryer at 375℉ for 3 minutes. Wrap your flatbreads in aluminum foil and heat frozen flatbreads for 6-7 minutes or until warm or when thawed for 4-5 minutes
- Cast-iron skillet – if you only have a small number of flatbreads, you can reheat them in a cast-iron skillet. Preheat the skillet and add the flatbread. Heat for 30 seconds, and turn and heat the other side for 20 to 30 seconds. Wrap in a clean kitchen towel and heat the remaining flatbreads

Vegan garlic and herb chickpea flatbread
This tortilla flatbread contains chickpea flour, garlic, and herbs. It is very easy to make vegan garlic herb chickpea flatbread.
Ingredients
- 1 cup of flour for all purposes
- 1 cup of chickpea flour
- 3 cloves of garlic
- 2 tablespoons of parsley
- 1 red onion
- 1 scallion finely chopped
- salt to taste
- 50 g of vegetable butter
- 175 ml of almond milk
- vegetable oil to roast a frying pan
Instructions
- Put milk and butter in a pan and let the butter dissolve
- Then put flour, garlic, onion, parsley, milk and butter mixture in the food processor
- Combine into a flexible dough
- Knead the dough and wrap it in foil before you let it rest for 30 minutes
- Cut into 10 pieces and knead each piece thoroughly
- Roll up a tortilla
- Heat the frying pan and brush with oil
- Bake the tortilla flatbread for about a minute until dark spots are visible. Turn and bake the other side
- Serve warm

I’ve faced a real difficulty rolling the dough, it’s sticking to the rolling pin. Can you please suggest me how can I solve the problem?

If the dough is sticking to your rolling pin put some flour on the rolling pin and flour the dough as well. If the dough is really sticky you may have used to much milk. To resolve you can add some flour (little increments else it will get to dry).

Here in the Netherlands we can buy chickpea flour in the supermarket so that is really easy. If you can’t buy it in the store but you can buy dried chickpeas you can make flour yourself. In the video for Spanish tortillitas shrimp cakes recipe you can see how that is done.
If you do not have dried chickpeas to make flour you can try it with normal chickpeas. Just put them in a kitchen machine first to get a smooth paste before you add them to the all purpose flour.

You can leave out the vegetable butter in this recipe. Take a look at my Yufka recipe, that is also made without any oil or butter. In that recipe I only use oil to bake the tortillas.
Usually you need some oil or butter in either the dough or on the pan that is why I am using it. The tortilla might get a little dry but definitely worth a try.
