However, I have tried this vegetarian variant here using Paneer and have kept the taste and its flavors at their peak. What is Paneer Rogan Josh

Paneer Rogan Josh is basically a vegetarian version for the famous dish Rogan Josh that is a specialty of Kashmiri Cusine.  It is mainly prepared with mutton, but here we have replaced it with Paneer and the rest recipe of gravy and spices we have kept is the same.

What is Rogan Josh

Rogan Josh is one of the signature dishes of the Kashmiri Cuisine that is rich in taste and exotic in flavor. Brimming with flavors of fennel, ginger, and marked by the striking red hue, it is indeed a celebration of all senses.

However, the key to this recipe is a smoky and caramelized flavor that comes from sauteing onions till they are dark brown in color. On the other hand, spices also play a very important role in this recipe to enhance the taste. In addition to all these, Ghee also adds depth to the whole dish. Do try this vegetarian version of the recipe with Paneer and I am sure you will relish the taste and flavors.

Storage Suggestions:

Preparing Paneer Rogan Josh is an elaborate recipe, so it is a good idea to roast the spices for masala in double quantity. This way you can use half of the masala and store the second half. Store the spices in the freezer in an air-tight container, label the name, and date on it. You can consume this masala in 2-3 months. It will stay good if stored properly.

The second way is to roast the spices and make onion ginger garlic gravy along and store it in a freezer. It should be stored in an air-tight container or a steel box. Label the name of the gravy and date and try to consume this within a month’s time.

Do not store paneer with the gravy, if you want you can store paneer separately and cook them together.

Recipe of Paneer Rogan Josh | Vegetarian Rogan Josh

Ingredients:

  • 2 tablespoons ghee (clarified butter)
  • 5-6 black peppercorns
  • 2 black cardamom pods
  • 4 whole cloves
  • 1 cinnamon stick
  • 1 piece mace
  • 2 onions, finely chopped
  • 6 garlic cloves, peeled, left whole1 piece fresh ginger, peeled and cut in half
  • Water, as needed
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 tbsp Kashmiri red chili powder
  • 2 teaspoons ground fennel seeds
  • 1 1/2 teaspoons garam masala
  • 2 tablespoons plain yogurt
  • salt as per taste
  • Boiling water, as needed
  • Handful chopped fresh cilantro

Ingredients for Paneer balls:

  • 2 cups grated paneer
  • 1 boiled potato
  • 1 tsp. ginger garlic paste
  • 1/2 cup finely chopped coriander leaves
  • salt as per taste
  • Cooking Oil for deep frying.

Method:

For the Gravy:

  1. Firstly, Heat the ghee (clarified butter) in a large pan over medium heat. Add the black peppercorns, black and green cardamom pods, cloves, cinnamon, and mace, and fry for 1 to 2 minutes, or until the spices are sizzling and fragrant.
  2. Stir in the chopped onion, and fry for 8 to 10 minutes, stirring regularly, or until golden brown.
  3. Add the garlic cloves and ginger. Stir in the ground coriander, cumin, red chili powder, fennel seeds, garam masala, yogurt, and salt, to taste.
  4. Cover the pan with a lid, and then reduce the heat to low, and simmer for 10 to 12 minutes. Now let it cool.
  5. Finally, add 2 to 3 tablespoons of water to the sauce stir well, and blend the gravy in a food processor.

For the Paneer Balls:

  1. Firstly, Take a bowl and mix all the ingredients properly and make small balls of it.
  2. Place it in the refrigerator for half an hour so that it becomes firm. Remove the paneer balls from the fridge and roll them in Maida and deep fry them.
  3. Keep it aside and add paneer balls in the gravy just before serving it.
  4. Finally, Stir in the chopped fresh cilantro just before serving.

Ingredients

Garnish Paneer Rogan Josh with finely chopped coriander leaves and add a teaspoon of ghee or clarified butter and serve it hot.
