Mocha Waffles With Chocolate & Peanut Butter Sauce

So I have a confession…I use to absolutely hate coffee until around two months ago. I always thought if I have to add tonnes of sugar to make it tastes remotely nice what’s the point? That was until I found this amazing chocolate caramel flavour instant coffee from a brand called Littles – mind blown!

Ok so it’s not ‘proper’ coffee, but it was certainly delicious! I then made it my mission to buy a mocha whenever I was out and about (to ease myself in gently, and because I love chocolate) – now I can drink normal coffee like a big girl!

Ever since then I love having coffee in the morning, so I thought why not actually have it in my breakfast? Voila, mocha waffles were born! The addition of chocolate and peanut butter sauces are an added luxury, but the the waffles will still taste amazing without them.

I had full intentions of decorating my plate beautifully, then I thought sod it and decided to pour on pretty much everything! More is always better when it comes to breakfast food!

INGREDIENTS
Serves 2

WAFFLES
– 1 cup GF oats (100g)
– 1 tbsp + 1 tsp instant coffee powder
– 2 tbsp cocoa powder
– 2 tsp cinnamon
– 1 tsp baking powder
– 1 small ripe banana
– 1 egg
– 1/2 cup milk (120ml)
– 1 tbsp honey

CHOCOLATE SAUCE
– 1 tbsp cocoa powder
– 2 tbsp maple syrup

PEANUT BUTTER SAUCE
– 1 tbsp smooth peanut butter
– 2 tsp coconut oil
– 1 tsp maple syrup

*I used Frylight Coconut Oil to spray on the waffle iron before pouring on the batter.

METHOD
Preheat
waffle iron to required temperature.

Add all the ingredients for the waffle batter into a blender and blend until smooth. Spray the heated waffle iron with your chosen cooking spray and poor the batter into the tray, spreading the mixture into each corner. Close the lid and cook for around 3mins or until the waffles are golden and crisp, then transfer to your plate.

Whilst the waffles are cooking you need to make both the sauces. In individual bowls/ramekins mix the ingredients together for the chocolate sauce and peanut butter sauce, until silky smooth

Drizzle the waffles with the sauces (be as messy as you like), add fresh berries and chopped pecan nuts.

This is a really luxurious breakfast – perfect for making with friends and seeing who has the most artistic flair with presentation!
