I feel like I have a customise theme on my blog at the moment – first my Build your own Granola Breakfast Bowl that I posted last week (check it out if you haven’t seen it yet) and now these granola cups! I love that each individual can customise the recipe to suit their own taste and use their favourite flavours.
These granola cups are the perfect quick breakfast – all you need to do is bake a big batch of the bases and then each day fill them with a new flavour combo!
My favourite combinations;
– yogurt and berries
– peanut butter and smashed raspberries
– ice cream and cacao nibs (maybe not for breakfast!)
The tip to achieving the crispy shell is leaving them to cool fully once they’ve come out of the oven – they’ll be crispy on the outside and chewy on the inside and ready for your yummy filling!
INGREDIENTS
Makes 6 granola cups;
– 1 & 1/2 cup GF oats (150g)
– 1/4 cup coconut sugar (35g)
– 1 tsp cinnamon
– 2 tbsp coconut oil, melted
– 1 tsp vanilla extract
– 3 tbsp honey
Filling
– yogurt (greek yogurt or dairy free)
– fruit (berries, kiwi, banana works well)
METHOD
Preheat oven to 160C/325F/gas mark 3
Combine all the ingredients together in a large mixing bowl; making sure everything is well mixed.
Spoon the mixture into a muffin baking tray, pushing the mixture along the edges to create a cup. Pop into the middle of the oven and bake for 35-40 mins.
Remove the granola cups from the oven once they have turned lovely and golden and leave to cool fully. Fill with yogurt and fruit of choice then enjoy!
