Whether you call these chicken skewers, chicken kebabs or chicken kabobs, you need to call these dinner tonight!
Boneless, skinless chicken breasts get a quick rest in a Greek inspired marinade featuring lemon juice and olive oil before being threaded on skewers and quickly grilled.
They come out golden on the outside and juicy and tender on the inside.
Some of you may be coming here looking for the old post which was titled Grilled Chicken Skewers with Mint and Lemon Dressing.
It was basically a post containing three recipes. These grilled chicken skewers, a tomato salad and a mint lemon dressing.
Since I regularly use all the different recipes, not only just together, I've split them into 3 posts. The tomato salad, which is linked above and the mint lemon dressing (coming soon) and these chicken skewers.
Ingredients
Boneless skinless chicken breasts - you could also use boneless thighs though they don't cut into nice cubes as easily.
Lemon juice - please use fresh squeezed.
Extra virgin olive oil - one with a fruity flavor.
Garlic cloves.
Instructions
In a bowl large enough to hold the chicken, mince the garlic and add it to the lemon juice and olive oil, whisk to combine.
Cut the chicken breasts into cubes.
Expert Tip - I did 7 cubes per breast. By cutting the same amount per breast it made it easier for me to proportion it on the skewers. Everyone got 7 cubes of chicken.
Add the chicken to the bowl and season with salt and pepper. Toss to coat in the marinade. Let sit out at room temperature for about 10 minutes.
Preheat grill to high.
Thread the chicken onto the skewers.
Expert Tip - I like to use 2 skewers running parallel. It makes it easier to turn the skewers and you don't have the chicken turning loosely on the skewers.
Grill the chicken for about 3-4 minutes per side for a total of about 8 minutes.
The chicken should be at about 165 degrees.
You can serve these on a pita with your favorite accompaniments. There subtle Greek inspired lemon marinade goes with everything.
We use them on pitas, add them to Greek salads, add them to pasta and dice them for a chicken salad.

Grilled Chicken Skewers
Ingredients
- 4 boneless chicken breasts cut into cubes
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 2 cloves garlic crushed
- sea salt and cracked black pepper
Instructions
- Place the chicken, lemon juice, olive oil, garlic, salt and pepper in a bowl and set aside for 5 minutes. Thread the chicken on skewers. Set aside.
- Heat a char-grill pan or a barbecue over high heat. Grill the skewers for 3-4 minutes per side or until cooked through. Total time of about 8 minutes. Chicken should be 165 degrees.
