This twist on the classic peach bellini will take your brunch to the next level.  The addition of grapefruit rose vodka puts a delightful spin on an already delicious drink.

What is a Peach Bellini?

The Bellini is a classic Italian cocktail whose name is derived from its color.  In the late 1940’s, inspired by regional white peaches, Giuseppe Cipriani of Harry’s Bar in Venice poured the world’s first Bellini.

His recipe was simple, and included 1 part fresh peach puree with 2 parts Prosecco.  The pinkish hue of the drink was said to have reminded him of the color in the paintings of the 15th century Venetian painter, Giovanni Bellini.  And so the peach Bellini was born.

What Does A Bellini taste like?

Bellinis are effervescent and a little sweet with their sweetness varying depending on the peaches used to make the drink.  I like to think of the Bellini as the more grown-up cousin to the Mimosa.

If you enjoy sparkling wine, such as Prosecco or Champagne, and you like peaches, you cannot go wrong with the peach Bellini.  It really does taste like a perfectly harmonious combination of the two.

Now for this drink we added a twist to the classic and introduced Ketel One’s Botanical Grapefruit and Rose vodka to the mix.  This definitely adds an extra dimension to the drink and gives it a next level flavor.

Bellini Food Pairings:

If you were to visit Harry’s Bar in Venice today, patrons would likely recommend that you order their grilled ham and cheese sandwiches to enjoy with your Bellini.  This combination is killer and my belly is rumbling just thinking of it.

Any type of brunch fare would also work well along with the Bellini.  Chocolate chip banana bread and lemon blueberry french toast would both be great pairings.

How to make a Bellini cocktail

To make the Sip and Feast version of a peach Bellini, you’ll need some grapefruit flavored vodka, frozen sliced peaches, prosecco, a blender, and a champagne flute.

We recently picked up a bottle of Ketel One’s new Grapefruit & Rose Botanical vodka and from the first sip, we knew we wanted to put this in a Bellini.  If you have any other grapefruit flavored vodka, you could use that as well.  In fact, you could probably use orange or peach flavored vodka in a pinch if you needed to.

Your first step will be to make a puree of the peaches and the vodka.  Adding the vodka before the blending process will help to liquify the peaches and prevent your blender’s motor from jamming.  The puree will be a bit thick, as pictured below.

Next, you will want to add the puree to the champagne flute, and top with a healthy dose of prosecco.

Next Level Peach Bellini with Grapefruit Rose Vodka

This twist on the classic peach Bellini is sure to be a welcome addition to your go-to cocktail lineup!

Ingredients 

  • 1/2 cup frozen peaches
  • 2 oz Ketel One Rose & Grapefruit Botanical Vodka
  • 4 oz Prosecco

Instructions 

  • Add the frozen sliced peaches and the vodka to a blender.  Pulse until combined and a thick puree is formed.
  • Spoon the puree into the bottom of a champagne flute.
  • Top with Prosecco and stir gently.  Enjoy!

Notes

  • We used grapefruit rose vodka for this recipe, but you can easily use nonflavored vodka as well.
  • A traditional bellini has no sugar, but if you like it sweeter add a 1/2 ounce of simple syrup and work up from there.
