There is nothing better than homemade pizza, you can add whatever toppings you want and you get to enjoy all the amazing aromas coming out of your kitchen. The only problem? most people don´t have the time to make homemade pizza. Well…that´s about to change. Here is a recipe for a Quick and Easy Pizza with Manchego, Roasted Peppers & Spanish Olives that is done in just about 15 minutes. I used pita breads as the pizza base, making this pizza super fast and easy to make. This pizza uses a simple combination of flavors but has an extraordinary flavor. Serve it as a tapas appetizer or next to a Simple Green Salad for a complete meal.

– How to Clevery use Pita Bread as your Pizza Base –

The secret to using pita breads as your pizza base is to cut them open horizontally so you end up with 2 pizza bases from each pita bread. You don´t want to use the whole pita as your base, your pizza will be too thick and the pizza will pretty much taste like bread. By using this method you get a better texture and you can enjoy the flavors of the pizza. Speaking of flavors, I added some Kiva Hot Smoked Spanish Paprika to these pizzas to give them a bit of a kick and a lot more depth in flavor, this truly took these pizzas to the next level. Quick and Easy Pizza with Manchego, Roasted Peppers & Spanish Olives

Ingredients

  • -2 pita breads
  • -1 can tomato puree
  • -1 cup shredded Mozzarella
  • -1 cup shredded Manchego cheese
  • -KIVA hot smoked paprika
  • -dried parsley
  • -1/2 red onion thinly sliced
  • -3 roasted red peppers
  • -10 black Spanish olives
  • -extra virgin Spanish olive oil
  • -sea salt
  • -freshly cracked black pepper
  • -fresh chives

Instructions

  1. Grab 2 store-bought pita breads and cut them open horizontally to end up with 4 round pieces of pita, thinly slice 1/2 red onion, pat dry 3 jarred roasted red bell peppers and roughly dice and thinly slice about 10 black pitted Spanish olives
  2. Add the pita breads to a baking tray lined with parchment paper, add 2 tablespoons of tomato puree to each pita and evenly spread around, season each pizza with sea salt, freshly cracked black pepper and a sprinkle of garlic powder
  3. Next add a handful of shredded mozzarella to each pita and top off with freshly shredded Manchego cheese, sprinkle some dried parsley and hot smoked paprika on top of the cheese, evenly divide the red onions, roasted peppers and black olives to each pizza, add a drizzle of extra virgin Spanish olive oil to each pizza and lightly season with sea salt and freshly cracked black pepper
  4. Add to a preheated oven bake/broil option 210 C / 410 F between 8-10 minutes or until the cheese is fully melted, transfer to a cutting board and top each pizza with freshly chopped chives, enjoy!

    I’ve just got back from my first ever trip to Spain! Barcelona was our destination and we could get the most gorgeous pizzas from a tiny pizzeria opposite our apartment. These pizzas are taking me right back. I’ll definitely be putting them on my menu for next week!
