Decadent Vegan Cheese Sauce
Why try my Vegan Cheese Sauce?
This Vegan Cheese Sauce is sinfully good! With the cashew cream base, the sauce is silky smooth, and satisfying. Your palate is flooded with umami from the addition of nutritional yeast and a hint of white pepper. This sauce is a win, coming in at under 10 minutes to come together!
Tools Check:
A high powered blender, like the Vitamix
A sauce pan or pot
Ingredient Check:
2 tbsp. vegan butter, I used vegan Becel
1/2 of a yellow onion, diced
1 cup raw unsoaked cashews
1 cup of water
1 veggie bullion cube
1 medium lemon, squeezed
2 small cloves of garlic, minced
1 tbsp. nutritional yeast
1/2 tsp. tumeric
1/4 tsp. white pepper
To garnish:
sweet paprika (mainly for colour contrast, but I think smoked paprika would add a beautiful, full flavour to this sauce)
fresh parsley

Ingredients

- vegan Becel
- 1/2 of a yellow onion diced
- 1 cup raw unsoaked cashews
- 1 cup of water
- 1 veggie bullion cube
- 1 medium lemon squeezed
- 2 small cloves of garlic minced
- 1 tbsp. nutritional yeast
- 1/2 tsp. tumeric
- 1/4 tsp. white pepper
To Garnish:
- sweet paprika mainly for colour contrast, but I think smoked paprika would add a beautiful, full flavour to this sauce
- fresh parsley
Instructions
The Nitty-Gritty:

Heat your pan/pot over medium heat and add in 2/3 tbsp. vegan butter

Dice your onion and add to butter. Saute until the onion becomes translucent. You want it to be slightly browned on the edges to add depth of flavour.

While your onion is cooking, add your water, cashews, veggie broth cube, lemon juice, garlic, nutritional yeast, turmeric and white pepper to the Vitamix

Once your onion is finished cooking, transfer to the blender. Blend your vegan cheese sauce on high for 2-3 minutes, until VERY smooth.

Pour your sauce into a bowl and garnish with paprika, and fresh parsley.

Wash your blender....do it now!!! save yourself a BIG mess later;)

And that’s all there is to it guys! I made this vegan cheese sauce to go over a quick mac n cheese I made the girls for lunch. The total meal took less than 15 minutes to get together!!!
For the Mac n Cheese, I used about 4 cups of dry macaroni and cooked it according to the package directions. Once the pasta was done, I simply drained it and poured my vegan cheese sauce over top! I garnished with the paprika, parsley and I added in Daiya mozza cheese shreds and my Vegan Parmesan Cheese.

The kids absolutely LOVED this easy mac n cheese lunch. This would be awesome to pack for a school lunch, or to make for a easy work week dinner meal.
This vegan cheese sauce would be perfect to go over steamed veggies, or to use as a base for a broccoli or cauliflower cheese soup as well!
