What You Need For This Recipe

To make this beef enchilada recipe you need 10 ingredients. Take a look at the ingredients below and put them on your shopping list. Here we go:

  • Beef – use lean ground beef
  • Tortillas – you need medium-sized flour tortillas
  • Onion – a small onion finely diced
  • Garlic – fresh garlic minced
  • Ginger – fresh garlic dime size piece finely diced
  • Beans – I use kidney beans
  • Tomato sauce – you can use sofrito sauce tomato sauce with onion and garlic
  • Seasoning – to add flavor the the meat use enchilada seasoning
  • Oregano
  • Cheese – use your favorite shredded cheese

How To Make Beef Enchiladas

  1. Start this recipe by browning the ground meat in a cast-iron skillet. Finely chop the onion, garlic, and fresh ginger.
  2. Add these to the meat and stir through the meat until soft and translucent.
  3. Now add a tablespoon of enchilada seasoning and stir through the meat. Add a cup of water and the meat stew simmer for 5 minutes.
  4. Pour the tomato sofrito sauce into a pan and warm it through. Stir in 1 tablespoon of enchilada seasoning mix oregano and 1 cup of water and let it also simmer for 5 minutes.
  5. Preheat the oven to 450℉/225℃. Warm the oven dish in the oven so it is warm when you start to bake the enchiladas.
  6. In the meantime, prepare the enchiladas. Take a tortilla, put one to two tablespoons of enchilada sauce on the tortillas, and add a tablespoon of the bean and minced beef mix.
  7. Sprinkle some cheese on top and wrap the tortilla.
  8. Repeat for the 5 remaining tortillas. When the oven is warm put the wrapped enchiladas in the oven dish and cover it with enchilada sauce.
  9. Sprinkle two cups of grated cheese like hard mozzarella or Gouda cheese across the middle of the enchiladas.
  10. Bake the oven dish for 20 minutes. Let it cool slightly and serve immediately.

Beef enchiladas

Serves: 3 Prep Time: 10 minutes Cooking Time: 20 minutes

Surprise your family with easy beef enchiladas. A family favorite made with ground beef, beans, and enchilada sauce. Easy weeknight recipe.

Ingredients

  • 200-gram minced beef
  • 6 small tortillas
  • 1 onion
  • 2 cloves of garlic
  • 1 dime-sized fresh ginger
  • 2 cups of kidney and brown Beans
  • 300 ml sofrito
  • 2 tablespoons enchilada seasoning
  • 1 tablespoon oregano
  • 1½ cups grated cheese

Instructions

  1. Heat a skillet and brown the ground beef
  2. Mince the onion, bell pepper, ginger and garlic. Add to the meat and brown
  3. Now add 1 tablesppon of enchilada seasoning and add some water
  4. Let it simmer for 5 minutes
  5. Take the tomato Sofrito sauce, put it in a pan and warm it. Stir in 1 tablespoon of enchilada seasoning and oregano and a cup of water
  6. Take a tortilla, add two tablespoons sauce before adding 1-2 tablespoons of the bean and minced beef mix. Sprinkle some cheese on top and wrap the tortilla. Put in the oven dish.
  7. Repeat for the 5 remaining tortillas. Cover with the remaining tomato sauce and some grated cheese
  8. Heat the oven to 450℉/225℃. Bake in the oven for 20-25 minutes
