What is a Tarte Tatin?
I had no idea what a tarte tatin was before I found this recipe. It sounded complicated, especially for someone who can't even make a pie crust. My eyes glaze over as soon as someone starts talking about keeping butter cold and working it in just so.
A Tarte Tatin is a French upside down apple tart. Think of a pineapple upside down cake only with apples and a pastry crust instead of cake. It is said that the Tarte Tatin was created by two sisters who ran a French hotel, The Hotel Tatin in 1888. One of the sisters was known for her apple tarts. One day, while distracted she put it in the oven upside down, and the Tarte Tatin was born!
Unlike the French sister known for her tarts, I am not known for my tarts. I pretty much don't do anything that calls for a crust. Working cold butter into flour just so, terrifies me. Luckily there is store bought puff pastry. Puff pastry is my best friend.
Mini Apple Tarte Tatin
I found these individual mini Apple Tarte Tatin in a 2010 issue of Donna Hay magazine. Don't you love individual servings of dessert? I do. For one, it's portion control and it is just feels so special to get your very own dessert.
These were so easy. First you cook some apples with butter and maple syrup in a non stick pan, I used my cast iron pan. You place an apple slice in the bottom of a muffin tin or ramekins. Roll out your puff pastry, cut into circles and place on top of the apples. If using ramekins place on a baking sheet. Place the baking sheet or muffin pan in the oven and bake. Let cook for 2 minutes and then flip out - it's important to serve these warm.
Apple Tarte Tatin
Puff pastry makes these so good and so easy. I topped them with a little cinnamon ice cream. Note – if you let them cool for too long the topping hardens in the base of your ramekin, a quick zap in the microwave warms it all up.

Apple Tarte Tatins
Ingredients
- 2 tablespoons butter
- ¼ cup maple syrup
- 2 green apples peeled, cored and thickly sliced
- 1 375 grams store-bought puff pastry thawed
- cream or vanilla ice cream to serve
Instructions
- Preheat the oven to 400.
- Melt the butter in a non-stick pan (I used my cast iron) over high heat. Add the maple syrup and apples and cook for about 4 minutes or until just tender.
- Place one apple slice in the base of a ⅓ cup capacity muffin tin (or ramekin like I did), and top with the maple mixture.
- Roll out the pastry on a lightly floured surface and using a round cookie cutter (8 ½cm) cut into 6 rounds. Place the rounds on top of the apple slices.
- If using ramekins place them on a baking sheet. Place baking sheet or muffin tins in oven and bake for 12-15 minutes or until pastry is puffed and golden.
- Let cool for about 2 minutes and then invert onto dessert plate. Top with ice cream or cream and serve.

I found this recipe VERY confusing. I had to read it fully several times. I finally deducted that Steps 4 and 5 were reversed on the recipe card. As it says to place in the oven until pastry turns brown. Then Step 5 says roll out the pastry. ???

Excellent recipe. Rather than leave the tarte to cool to room temperature, I switched the oven off, left the door open whilst we ate our Sunday lunch and turned the tarte out when we were ready to eat it. Delicious with salted caramel ice cream!
