This Banana Brownie Swirl Cake is exactly what it sounds. A moist and flavorful banana cake filled with a dark and dense ribbon of Brownie.

I would like to dedicate this post to NYC,the greatest city in the world, and its people.

If you follow me on Instagram, you may have already know that back in my twenties I used to live in NYC. Every day I would get on the bus to work and ride to Mid Manhattan.

The memory of the crowded side walks shaded by beautiful skyscrapers is clear in my mind like it was yesterday. There is something special about walking the streets of NYC. Absorbing the sounds of the busy traffic and inhaling the vibrant energy.

Like many other New Yorkers, I had my own city rituals. The first one of the day, was getting coffee and a Manhattan size Banana Chocolate chip muffin.

During my first few months in NYC it seemed that NYC was a real person.

Then, on the morning of Sep 11, 2001 while riding the bus to work I noticed that one of the twin towers had a dark cloud around it. With no clue of what’s really going on, I went up to the office and was wondering why the phones were ringing off the hook.

Which is how I got the news.

Everybody was instructed to get out of the building for safety. Heart broken and sad the people of NYC came out to the streets. No one was scared or worried they might be harmed. All wanted to get in the subway and get down to reach a hand. But they temporarily shot it down, due to safety reasons.

It took a while for the city to get back to normal. In a way it never did. But I learned the true reason why NYC is the greatest city in the world.

It is filled with the greatest people of the world!

When I came a cross this recipe from the Cake, I love you book. I got all kind of NYC home sick. But that’s what baking (and food) is all about, isn’t?

About The Recipe:

  • It is important to use an overripe bananas since it is the best way to achieve the best flavor.
  • Best to allow the cake to get completely cooked before cutting it. This will allow the brownie to set and the beautiful swirl design to firm.
  • If you wish, you can use a tooth pick or a knife to swirl the batter after pouring it into the pan. I did not since I wanted a thick Brownie layer.

Ingredients

For the Brownie Batter

  • 5 TBS Unsalted Butter (70 g / 2.5 oz)
  • 1/4 Cup Unsalted Chocolate, coarsely chopped (30 g/ 1 oz)
  • 1/2 Cup Sugar (100 g / 3.5 oz_
  • 1 Large Egg, room temperature
  • 1 tsp Vanilla Extract
  • 4 TBS AP Flour (36 g / 1 1/4 oz)
  • 1/2 tsp Fine Sea Salt

For the Banana Batter

  • 1/2 Cup Unsalted butter, soften (113 g / 4 oz)
  • 1 Cup Sugar (200 g / 7 oz)
  • 2 Large Eggs
  • 1 tsp Vanilla Extract
  • 2 Medium Mashed overripe Bananas (230 g/ 8 oz)
  • 1/4 Cup Buttermilk 60 ml
  • 1 3/4 Cups AP Flour (210 g /7.5 oz)
  • 1 tsp Baking Powder
  • 1/4 tsp baking soda
  • 1/2 tsp Fine sea Salt

Topping

  • 1 Cup Semi sweet chocolate chips (170 g/ 6 oz)
  • 2 tsp vegetable shortning
  • 1/2 Cup Dried Banana Chips

Instructions

  1. Preheat oven to 350F. Grease and line a 9"-5" loaf pan with butter and parchment paper.

  2. In a medium bowl, warm the chocolate and butter on high for 1 minute. Stir until completely melted and smooth. Add the sugar vanilla and salt and stir. Stir in the egg then the flour and set a side to cool.

  3. In a bowl of a standing mixer, on medium speed beat the butter and sugar together until light and fluffy, about 3 minutes.

  4. Add the eggs, one at a time and scrape the sides of the bowl. Add the banana, vanilla and butter milk.

  5. Turn the mixer off and sift the flour, baking powder, baking soda and salt on top of the banana batter and fold just until combine.

  6. Spoon half the banana batter into the prepared pan and spread evenly with a spatula.

  7. Pour the brownie batter on top of the banana batter and evenly spread.

  8. Add the remaining of the banana batter on top of the brownie batter and smooth evenly.

  9. Bake in the middle rack for 45-55 minutes or until a wooden skewer comes out clean from the center of the cake.

  10. Remove the cake from the oven and wait about 10 minutes before removing from the pan.

  11. Warm up the chocolate chips and shortening and stir until smooth.

  12. When the cake is completely cooled, pour it over the cake and sprinkle with the dried banana chips.
