What You Need For This Recipe

To make the best taco lasagna you need several ingredients on your shopping list. Make certain you have these available when you start:

  • Tortillas – use medium size flour tortillas that fit your skillet
  • Beef – choose lean ground beef
  • Onion – finely dice
  • Pepper – dice sweet red bell pepper
  • Garlic – fresh garlic

  • Tomato sauce – I use Frito tomato sauce a sauce made with onion and garlic
  • Seasoning – use homemade taco seasoning

  • Water
  • Cheese – select your favorite grated cheese like mozzarella or Gouda cheese

How To Make Taco Lasagna

  1. To make this taco bake recipe start with a big skillet or cooking pan. Preheat your skillet and brown your good quality lean ground beef in the skillet.
  2. You do not need any oil or butter to do this because ground beef contains a lot of fat so it will brown on its own. If you have a lot of excess fat drain it before you continue.
  3. Then finely dice bell pepper, and onion, and mince the garlic. Add it to the beef and stir it through so the vegetables go soft and translucent.
  4. Also finely dice the mushrooms and add these to the beef mixture. Stir again for another couple of minutes. Sprinkle the taco seasoning on the beef mixture and stir it through the beef.
  5. Now add the tomato Frito sauce to the skillet. Stir and cover the beef with tomato sauce before adding the water. Finally, add 2 tablespoons of homemade pesto and stir it through the beef mixture. Let it simmer for 5 minutes.
  6. Preheat the oven to 450℉/225℃ and heat a cast-iron skillet in the oven while it is heating. Then it is time to stack the lasagna.
  7. Start with 3 to 4 tablespoons of the beef mixture and cover the skillet. Put a flour tortilla on top of the first layer of the beef mixture. Repeat these steps with the remaining two tortillas and the beef.
  8. Sprinkle the shredded cheese on the last layer of beef and cover the skillet with tin foil. Bake the skillet in the oven for 30 minutes. Remove the tin foil and bake for another 10 to 15 minutes.
  9. Your taco lasagna is done. Serve immediately.

How To Store Taco Lasagna

If you have leftover lasagna, you can store them in several ways:

  • Refrigerator – if you plan on serving the leftover lasagna within a day or two you can store it in the fridge. Transfer the lasagna into an airtight container.
  • Freezer – if you plan on keeping the lasagna longer transfer the leftover lasagna to a freezer-friendly airtight container. Label it and store it for up to 3 months

Reheat Taco Lasagna

Depending on whether you put the lasagna in the freezer let it thaw first in the fridge before reheating. The easiest way is to reheat it in the oven.

Ingredients

  • 3 tortillas
  • 200 grams of lean beef mince
  • ½ onion
  • ½ bell pepper
  • 2 garlic cloves
  • 10 mushrooms
  • 300 ml frito tomato sauce
  • 2 tablespoons taco seasoning
  • 2 tablespoons pesto
  • 1 cup of water
  • 1 - 2 cups of hard cheese like mozzarella or Gouda

Instructions

  1. Take a big skillet and bake the ground beef until brown
  2. Then add the bell pepper, onion, and minced garlic
  3. Finely dice the mushrooms
  4. Stir until soft and translucent
  5. Sprinkle the taco seasoning on the beef mixture
  6. Now add the frito tomato sauce and stir through the beef before adding the water.
