Creamy Keto Cauliflower Soup with Bacon & Cheddar

Bacon. Cheese. Creamy cauliflower goodness. All in one bowl! This Keto Cauliflower Chowder was written a couple of years ago and it is still just as delicious today as it was then.

I’m bringing it back to the top for all of those who are new to Mama Bear’s Cookbook, so that you may enjoy a bowl of hot, tasty Low Carb Cauliflower Soup this fall. I hope you love it as much as we do!

Ingredients

All ingredients used in this Creamy Keto Cauliflower Soup with Bacon and Cheddar.

Chicken Broth – Use homemade chicken broth like this Instant Pot Chicken Broth, or buy organic chicken broth with as little additives as possible.

Cheddar – I prefer sharp aged white cheddar for this Keto Cauliflower Soup, but any cheddar would work fine.

Sea salt – The amount of salt you are going to need will completely depend on how salty your cheese and chicken broth are. This is why it’s important to taste test your Cauliflower Bacon Soup before seasoning with salt. I usually use somewhere between 0 and 1/2 tsp for the whole pot – yup, sometimes I don’t need any salt at all!

How to make Keto Cauliflower Soup

Heat a soup pot on medium high heat. Once hot, fry the bacon until crisp, then set aside, leaving the bacon grease in the pot. While the bacon is frying, chop the onion and celery, then add them to the pot once the bacon has been removed. Cook until the onion is translucent and the celery is soft.

While the onion and celery are cooking, chop the cauliflower into bite sized pieces and either finely mince the garlic or press it through a garlic press.

Once the celery and onion are cooked, stir in the black pepper, thyme, red pepper flakes and garlic. Cook for 1 minute, until fragrant, then toss in the cauliflower to coat. Pour in the chicken broth, bring to a boil and simmer for 20 minutes, or until the cauliflower is fork tender.

Puree the soup until smooth using an immersion blender, or cool completely and puree using a blender.

Divide into 6 portions and garnish with extra grated cheddar cheese, the bacon and minced parsley.

  • 6 slices bacon
  • 1 small onion
  • 3 stalks celery
  • 3 cloves garlic
  • 1 ½ tsp thyme
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes
  • 1 large cauliflower about 5-6 cups florets
  • 6 cups chicken stock *see note 1
  • ¾ cup heavy cream warmed *see note 2
  • 1 cup aged cheddar cheese grated *see note 3
  • salt to taste *see note 4
