It’s been almost a year since I’ve quit my job in order to pursue Windy City Dinner Fairy full time, and things couldn’t be better.  I’m currently in the middle of styling a cookbook (whaaaaaat) and have been able to work with some incredibly talented people in the process.  Every day is different, which is amazing.  I am learning a ton, and have never been more inspired to be in the kitchen.  Not only creating new recipes on the baking front, but the culinary side too.

I’ve been so fortunate to have a lot of incredible opportunities come my way, but I have to say, it’s not luck.  I truly feel that what you put out into the universe, you ultimately get back.  I hope my “luck” continues.

Back to the food! We had a shoot planned for the book and plans change (as they often do), and we rolled with the punches.  Lucky for me, I had some extra delicious ingredients in my fridge due to the cancellation, and today I put them to good use!

Because I had a few cakes to make this weekend, I wanted to make something that I didn’t have to watch and stir.  So I pulled out my trusty Crockpot to make this creamy cauliflower cheddar soup.  It turned out so delicious, and the perfect weeknight meal that you can throw in before work, and it will be done when you’re home! How perfect is that?

It makes enough for leftovers, so you can eat it the next day for lunch, or stick it in the freezer for later! So get your Crockpot out and get ready to make a delicious creamy soup with almost no effort at all!


I used my immersion blender for this cauliflower cheddar soup, but if you don’t have one you are more than welcome to use a blender.  Make sure it has a vent or let your soup cool a bit before blending. Serve this in a nice big bowl with some crispy bacon, some extra cheddar and fresh chives on top for a meal that feels like a big hug.

I got these super cute soup bowls from World Market.  They’re actually Weck jars typically used for canning.  I loved their shape and they’re perfect for soup! The napkins are from Chip and Joanna Gains’ Target line. I seriously want everything in their collection. I got these vintage spoons from my local Goodwill, which has quickly become my favorite place to shop for food photography props.

This Slow Cooker Cauliflower Cheddar Soup is so delicious and SO easy to make. Get ready for creamy cauliflower soup like you’ve never had it before!


Ingredients

Scale

7 cups chicken broth

1 head cauliflower cut into chunks green part discarded

2 leeks, trimmed and chopped (white part only)

6 garlic cloves

1/4 tsp. pepper

1/2 tsp cayenne

3 cups shredded sharp cheese

1/2 cup heavy cream

salt and pepper to taste

For Garnish:

6 slices of bacon cooked and crumbled

chopped chives

additional shredded cheese


Instructions

  1. In a 6-quart slow cooker at the chicken broth, cauliflower, leeks, cayenne, garlic, and pepper.
  2. Cover and cook on LOW for 6-8 hours.
  3. Use an immersion blender to blend or add everything from the slow cooker into a blender, cover, and pulse until smooth. Add this back to the slow cooker. Add the shredded cheese and cream, stir. Now add salt to taste. I add about a 1/4 tsp.
  4. Serve topped with bacon, cheese, and chives.
  5. Enjoy!
