What You Need For This Recipe

To make this avocado shrimp quesadilla recipe you need several ingredients. Make a list so you will not forget any ingredients.

So, this is what you need:

  • Tortillas – make these quesadillas with medium or big-size flour tortillas
  • Shrimp – you can use frozen or fresh pink shrimp
  • Mushrooms – finely slice
  • White onion – finely dice
  • Garlic – mince fresh garlic
  • Red bell pepper – dice sweet red bell pepper
  • Avocado – slice it
  • Cheese – use your favorite grated cheese
  • Olive oil – to cook the shrimp
  • Cooking spray – to spray on the tortillas
  • Season – use quesadilla seasoning (optional)

How To Make Avocado Shrimp Quesadilla

  1. To make this shrimp recipe start with cutting the mushroom into thin slices and finely dicing the onion. Then it is time to start with the quesadilla filling.
  2. Take a small skillet and pan-fry the bell pepper, white onion, and garlic in olive oil.
  3. You can add a tablespoon of quesadilla seasoning but this is optional. When the ingredients are soft and translucent add the mushrooms and cook until these are also soft before you set the filling aside.
  4. In the next step, pan-fry the shrimp with a little olive oil for a couple of minutes. Do not leave them in the skillet too long.
  5. Move them around the pan and when they are browned take the shrimp mixture out of the skillet and set it aside.

  6. Heat the skillet and spray with cooking spray or olive oil. When the skillet is medium-hot, fold two tortillas and put them in the pan.
  7. Lift one side of the flour tortillas and fill with the bell pepper, onion, garlic, and mushroom mixture. Sprinkle this part of the quesadilla generously with cheese.
  8. Close the tortilla and repeat for the second quesadilla. Bake the shrimp quesadilla for 3-5 minutes before you turn the quesadillas. Keep a close eye on the tortillas as they brown very fast.
  9. Bake the other side of the quesadilla for 2-3 minutes as well. Take off the heat and let it cool slightly. Cut the quesadilla into three equal parts like a wedge and serve with this amazing quesadilla sauce.
  10. Ready to serve.

Instructions

  1. Clean the shrimp and cut them in half. Heat a skillet and saute the onion, mushroom, and garlic with a tablespoon olive oil.
  2. Stir and cook for a few minutes until soft. Add 1 tablespoon quesadilla seasoning (optional). Put aside in a bowl
  3. Sauté the shrimp in olive oil for a few minutes until they have some color. Take out of the pan as well
  4. Now add 4 sprays of PAM cooking spray or 1 tablespoon olive oil. Put a tortilla in the skillet. Fill the tortilla with half of the shrimp vegetable mix
  5. Cover with cheese and fold. Repeat for the second quesadilla. Cook for 3 to 5 minutes
  6. Turn when the tortillas are brown and cook the other side for another 2-3 minutes
  7. Take out of the pan and cut in wedges.
  8. Serve immediately
