What You Need For This Recipe

To prepare this ultimate nacho recipe you only need a limited amount of ingredients.

Take a look at this shopping list:

  • Tortilla chips – you can make tortilla chips from scratch but this recipe is also great for using up stale tortilla chips
  • Grated cheese – choose your favorite cheese like hard grated mozzarella, Gouda or Gruyere cheese
  • Cherry tomatoes – dice into small pieces
  • Jalapeño – to add a little kick to the nachos finely chop some pickled jalapeño
  • Red onion – finely dice the onion to add some color and flavor to the nachos
  • Scallion – finely slice
  • Chives – for a pop of color cut chives on sprinkle them on top of the nachos

How To Make Vegetarian Nachos

  1. This is the easiest nachos recipe you ever tried, for all your parties, game nights, or snack times. Best of all this recipe is done in less than 10 minutes.
  2. Start by preheating the oven at 450℉/225℃. In the meantime, finely chop the jalapeño, the red onion, and the cherry tomatoes. Set it aside.
  3. Take a big bowl or oven dish so you can layer the ingredients. Layering is the secret to the best nachos. You do not want to eat all the cheese at once and when you get to the bottom of the bowl there are only tortilla chips left.
  4. So do not just put the tortilla chips in a bowl and top it with cheese but layer the ingredients. First, take a handful of tortilla chips and put them in a bowl.
  5. Sprinkle two or three tablespoons of grated cheese on top of the tortilla chips. Then add the chopped tomatoes and sprinkle red onions, jalapeño, and chives before adding the second layer of tortilla chips.
  6. Repeat at least three times and alternate the chips with the red onion, jalapeño, chives, and tomatoes. Cover the final layer of tortilla chips with cheese.
  7. Put the bowl in the middle of the oven for 7 minutes or until the cheese has melted.
  8. Garnish with some of the remaining chives and finely chopped scallions. Serve these vegetarian nachos immediately.

For some reason, I always think that making nachos is a huge task, when in fact these are done in no time. In less than 10 minutes you can have them on the table. It is such an easy recipe. No meat, no preparing different ingredients.

Just combine and put it in the oven with loads of cheese. Just the smell of the melting cheese in the house will make you hungry. If you want, you can make the whole recipe from scratch including the corn tortillas.

How To Store Nachos

Nachos are best served straight out of the oven. If you have leftover nachos you can store them. Let them cool completely before storing them.

Store them in airtight containers, or a resealable bag, or cover the baking dish with aluminum foil.

Serves: 3 Prep Time: 3 minutes Cooking Time: 7 minutes

Ingredients

  • 75 grams tortilla chips
  • 50 grams grated cheese
  • 8 cherry tomatoes
  • 2 slices jalapeño
  • ¼ red onion
  • 1 scallion

Instructions

  1. Pre heat the oven at 450℉/225℃
  2. Finely chop the jalapeño, red onion and the cherry tomatoes. Put them aside
  3. Take a bowl and alternate a layer of tortilla chips with tomatoes, red onions, jalapeño and chives before adding the second layer of tortilla chips
  4. Make at least three layers of tortilla chips and the vegetables
  5. Put the bowl in the middle of the oven for 7 minutes or until the cheese is melting
  6. Decorate with the remaining chives and finely chopped scallions
  7. Serve immediately
