Why rooibos iced tea is a healthy beverage
Rooibos (redbush) is naturally caffeine free and full of health benefits, which makes it ideal to enjoy by adults and children alike. Both as regular, hot tea as well as iced tea. Rooibos is so healthy it is actually the kind of tea you want your children to like!
Rooibos is naturally quite sweet so you won't need to use as much sugar in rooibos iced tea as you would in black or green tea. In fact, it's probably the healthiest type of iced tea you can make!
Because of its subtle sweet, almost neutral flavour (without any tartness) red rooibos can be successfully paired with fruit. My favourite fruit to combine with rooibos are raspberries. These 2 ingredients make a fantastic match and actually complement one another. And don't just take my word for it, make this recipe! I am sure you'll agree with me.

This nutritious iced tea is very easy to make and here are a few photographs that will hopefully make the process super clear.
Step-by-step recipe instructions
1.Make rooibos tea using 3 tea bags.
2. In a pan heat up the raspberries, add the sugar and vanilla and cook quite rapidly for a few minutes until the mixture becomes syrupy, stirring often.
3. Put the mixture through a fine sieve and using a large spoon to help separate the pulp and juice from the seeds.
4. Once the tea has cooled add the raspberry mixture, lemon juice and mint leaves. Drop in fresh raspberries and a couple of lemon wedges and refrigerate for about an hour. Serve with ice cubes.
What other ingredients go well with redbush iced tea
I added a bit of vanilla bean paste which has a warm sweetness about it, perfect in this beverage. Vanilla is such a good match for rooibos you can actually buy vanilla infused rooibos tea in the supermarkets!
I also used a fair amount of lemon juice, which infuses this red rooibos iced tea with refreshing, citrusy notes. To make it even more refreshing I also stirred several fresh mint leaves in at the end.
Top tips
Use regular or flavoured rooibos tea (omit the vanilla paste if using flavoured tea). Flavours such as vanilla, chai or earl grey rooibos.
You can make the tea ahead and, once cooled, refrigerate overnight until you are ready to make the recipe.
Either fresh or frozen raspberries are fine to use. Frozen will take about 2 more minutes to cook.
Adjust the amount of sugar to suit your preference.
I created the froth in my iced tea by placing a hand blender into the jug, before adding the lemon wedges and mint leaves, and blending on low speed for a few seconds. This step is optional.

Rooibos Iced Tea with Raspberries
Ingredients
- 3 rooibos/redbush tea bags
- 3 cups (720 ml) water 1c boiling, 2c cold
- 1½ cups (190 g) raspberries
- 3-4 tablespoons sugar
- 5-6 tablespoons lemon juice
- 1 teaspoon vanilla bean paste or extract
- 8 mint leaves
- ice cubes, fresh raspberries, lemon wedges for serving
Instructions
- Make the tea using 1 cup of boiling water (and 3 tea bags). Set aside for a few minutes, then remove the tea bags and add the remaining cold water. Set aside to cool completely.
- In a saucepan heat up the raspberries, add the sugar and vanilla and cook quite rapidly for 2-3 minutes stirring often.
- Put the mixture through a sieve, using a large spoon stir the mixture squashing the fruit to help separate the pulp and juice from the seeds.
- Once the tea has cooled add the raspberry mixture, lemon juice and mint leaves. Drop in fresh raspberries and a couple of lemon wedges and serve with ice cubes. Keep refrigerated.
