I hope you guys are enjoying your weekend so far! We definitely are – the temperatures are about 10 degrees down (it was about 36°C yesterday and absolutely unbearable!), the air feels crisp and fresh and my baby is finally able to sleep normal. 😀 Pheww! Honestly, never ever I’ve thought I’d pray for rain and cooler temperatures but here I am. 🤗

Let’s go back to the recipe though..

If you guys love mussels like me, I’m sure you gonna love this lovely salad. It reminds me of the hot Summer nights spent at the seaside. I always used to get mussels – Mussel salad, Mussel stew, Mussel risotto, Deep fried Mussels (one of my fav) and whatnot. Yeah, a bit of a Mussels freak 😂 But I love almost all kinds of seafood, especially if it’s fresh. There’s no better taste than the freshly caught fish or shellfish. One of the best seafood I’ve had was actually a simple tuna and monkfish skewer, in Barcelona. But the taste just stayed with me. 🤣 It was just out of this world (I know I sound like a real foodie!).

Crunchy Mussel Salad

As you can see, I used lots of fresh parsley. Parsley is one of the herbs I use almost on everything. It just makes the dishes so appetizing and freshly tasting. Also, I added chopped carrots, marinated red peppers, grilled corn, spring onions and quite a lot of lemon juice. Mussels love lemons, so be generous. 😆
