Foil packet recipes are easy to make with minimal cleanup required. Classics such as salmon foil packets and grilled asparagus in foil are always hits. These potato foil packets are my go-to summer grilling recipe, because let’s face it, you can never go wrong with bacon!

Do you ever have those recipes you love to eat year round? Grilled potatoes in foil is one of mine and they’re so easy that I end up making them quite often. The family doesn’t mind because it’s one of their favorite meals as well, especially because you can toss chicken or steak in with them to add some more protein. Add a hearty salad on the side such as black eyed pea salad for a memorable meal!

The ingredients for this recipe are quite simple! All you need is diced potatoes, melted butter, ranch seasoning, cheese, bacon, sour cream and chives.

How Do You Make Grilled Potatoes In Foil?

Place diced potatoes in a large bowl. Add the melted butter and ranch seasoning, then toss to coat. Place the potatoes onto large squares of foil. Fold up the foil to make packets, then grill or bake the potatoes until they’re tender. Open the packets and add cheddar cheese and bacon. Cook the packets for a few more minutes until the cheese is melted. Add sour cream and chives, then serve and enjoy.

Tips For The Perfect Dish

  • Although any potatoes will work just fine for these potato foil packets, I suggest using russet potatoes. They’re inexpensive, readily available and really give these grilled potatoes a baked potato taste.
  • There are a couple of ways you can cook your grilled potatoes in foil. Don’t let the name deceive you. These definitely can be made on the grill, but if you’re unable to grill or don’t feel like it, they can also be made in the oven without sacrificing any flavor. Instructions are provided for both routes of cooking in the recipe card below.
  • This dish is best when served immediately. Any leftovers can be stored in the fridge, and will stay fresh for two days.
  • You do not need to add extra salt to this dish because the ranch seasoning already has salt in it.
  • Feel free to use olive oil instead of butter if needed.
  • Make it a meal by serving your potato packets with other summer classics such as grilled chicken tenders, watermelon salad, carrot salad or grilled peaches.

Quick Tip

Use freshly grated cheese for best results. The bags of pre-shredded cheese at the grocery store contain preservatives and anti caking agents and don’t melt as well.

Do you need to boil potatoes before grilling?

You do not need to boil your potatoes before you grill them. The potatoes will cook through in the foil packets with no risk of burning since they’re in foil and not directly touching the grill.

It takes about 25-30 minutes to cook diced potatoes on the grill. This recipe uses potatoes that are cut into 1 inch pieces. If your potatoes are cut larger, it will take more time.

Flavor Variations

These grilled potatoes are great as-is, but you can add other ingredients to customize the dish to your tastes.

  • Protein: Instead of bacon you can use diced ham or cooked pancetta. You can also turn this dish into a main course offering by adding some cooked Italian sausage or ground beef.
  • Cheese: Swap out the cheddar cheese for a different variety. Some great options include mozzarella, pepper jack or colby.
  • Vegetables: Feel free to add some vegetables to these foil packets. I like to add red bell peppers, broccoli, zucchini or mushrooms.
  • Herbs: Swap out the chives for some other type of fresh herbs such as dill, green onions, rosemary, thyme or parsley.
  • Potatoes: This dish will also work well with red potatoes or Yukon Gold potatoes.

I have to say, there are few things more satisfying than a good potato side dish. I love these grilled potatoes because they’re hearty, easy to make and cleanup is minimal. We will be making these foil packets quite a few more times this summer.

Ingredients 

  • 1 1/2 pounds Russet potatoes cut into 1 inch pieces
  • 4 tablespoons butter melted
  • 1 1/2 tablespoons ranch seasoning powder
  • 1 cup shredded cheddar cheese
  • 6 slices bacon cooked and crumbled
  • 1/4 cup sour cream
  • 2 tablespoons chives sliced
  • cooking spray

Instructions 

  • Preheat a grill to medium heat or an oven to 400 degrees F.
  • Coat 4 large squares of foil with cooking spray.
  • Place the potatoes in a large bowl along with the butter and ranch seasoning. Toss to coat.
  • Divide the potatoes evenly among the foil squares. Fold up the foil to seal the packets.
  • Bake or grill for 25-30 minutes or until potatoes are tender.
  • Open the foil packets and add the cheese and bacon. Leave the packets open and return to the oven or grill. Cook for 3-5 minutes or until cheese is melted.
  • Top each packet with a tablespoon of sour cream and sprinkling of chives, then serve immediately.

Notes

  1. You can use either ranch dressing powder or ranch dip powder, either will work just fine.
  2. Other types of potatoes will also work in this recipe if you don’t have Russets on hand. Feel free to substitute red potatoes or Yukon Gold potatoes.
